Root vegetables are vegetables that people grow because of their fruits, they are underground. The fruits contain a large amount of vitamins and minerals, as well as sugar and protein. We use them to prepare various dishes and for preparations for the winter. The plant consists of three parts: head, neck and root.

In total, 3 types of root crops are distinguished. The separation is based on their differences in size, appearance, structure and nutrients in the composition.

In accordance with this, the following types are distinguished:

  • Carrot-type vegetables. The core of these vegetables contains fewer nutritious vegetables and is lighter in color. Their bast part contains a large amount of nutrients.
  • Vegetables similar to radishes. Here, the opposite is true: nutrients accumulate in the middle. These vegetables are round or oblong. The color can be different.
  • Beet-type vegetables. In such vegetables, nutrients are also accumulated in the bast part, and the woody part contains few vitamins and minerals.

Vegetables included in the group of root crops require abundant watering and fertile soil.

There are three families of vegetables:

  • Cabbage or cruciferous. These vegetables grow best in temperate climates. Among them, you can find both annual vegetables and two and three year olds. Such vegetables are pollinated by insects, since inflorescences appear during the ripening period.
  • Umbrella. Their distinctive feature is the umbrella-shaped inflorescences. The color of flowers can be different, but most often it is pale. Vegetables from this family are also of great importance to humans.
  • Astrovye. They differ in their complex inflorescences. Also among them you can find annual and biennial plants.

  • Beet. It is rich in vitamin C, helps to remove toxins and toxins from the body. Differs in juicy pulp, high content of vitamins and minerals, as well as sugar.

  • Carrot. Contains carotene, sugar, vitamins PP and E and minerals.
  • Celery. Contains fiber, potassium, calcium, phosphorus, vitamin C, PP, B vitamins.
  • Parsley. Contains vitamin E, C, K, B and minerals.

  • Scorzonera. A nutritious vegetable contains sugars, fiber, carotene, vitamins C, B, E, R. R. Also minerals: calcium, potassium, magnesium, phosphorus and others. In Russia, it is not widespread, but the fruit is tasty and nutritious. It is used in the treatment of various diseases.
  • Oat root. Rich in nutrients. It has a sweet and spicy taste. Most often it is used in dietetics to treat metabolic disorders and gastrointestinal diseases.

Asteraceae are not widespread, but they are of great benefit and can improve the condition in some diseases.

These vegetables make up a large part of the human diet. By consuming them regularly, you will receive the required amount of minerals and nutrients, improve your health and boost immunity.
