Roasted rooster is a dish that can surprise and delight your guests. Poultry meat is tender and appetizing. If cooked correctly, a real culinary masterpiece can come out.

It is best to opt for a domestic cock. The ideal option is a young bird that has not yet trampled chickens. The meat of the old rooster is rather dry and tough. Not as fat as a goose and not as juicy as a chicken. Middle-aged roosters, as a rule, are boiled or extinguished. In extreme cases, the meat must be marinated, then it will not be so tough.

The rooster does not have to be raised by you. The carcass can be bought from private owners in the market or in the nearest village. You will have to pay a little more than for the store. However, the risk of eating meat filled with steroids and other “chemicals” will be significantly reduced.

You will need:

  • rooster carcass (2–4 kg)
  • salt (1 kg)

Wash the bird, spread with mustard. This will make the meat softer. If the rooster is young, you can skip this step. In case you come across a rooster with feathers, singe the carcass, then pluck, gut and only therefore wash it. Chop off the neck, legs to the knee joint and the wings to the first joint. Pour a box of fine salt onto a baking sheet and spread it evenly over the baking sheet. Place the poultry with their backs down on the baking sheet.

Place the baking sheet in the oven for about one hour at 150 ° C. The larger the rooster, the longer it needs to cook. You can determine that the bird is ready by the presence of juice flowing from the carcass.

Get the meat out. A deliciously cooked rooster is ready!

Cooking a chopped rooster

Another option is suitable for those for whom the appearance of the dish is of secondary importance. First, do all the same operations as in the previous version: the bird needs to be plucked, washed and cut off the excess. Then cut the rooster into pieces.

Marinate the rooster pieces in mayonnaise, beer, or wine vinegar. Marinade is a matter of your personal taste. Then send the rooster to the oven. In this case, it will bake somewhat faster.

Alternative baking option

You will need:

  • rooster carcass (2–4 kg)
  • onion (2 onions)
  • tomato (1 pc.)
  • garlic (1 head)
  • basil (2 tablespoons)
  • salt

The first steps for washing and plucking a rooster are the same as in the previous versions. Fry the rooster in a frying pan in boiling oil until golden brown.

You can also cook a rooster for about an hour before baking.

Then take a suitable piece of foil and place the poultry carcass on it. Grate with seasonings, overlay onions, stuff with vegetables and salt. Wrap the carcass in foil and place on a baking sheet in the oven. Cook for about half an hour at 180-200 ° C.
