For daily meals, prepare simple yet nutritious and healthy meals. One of the family’s favorite recipes is noodle soup. Children especially like him. Cook the soup with vegetable, mushroom or chicken broth and add a variety of spices.

The most popular recipe for a quick lunch is a delicious noodle soup with chicken broth. This dish is ideal for baby and diet food. It is low in calories, but the feeling of satiety persists for several hours.

You will need: – 1 small gutted chicken; – 1 glass of vermicelli; – 1 large onion; – 1 carrot; – salt; – black peppercorns; – Bay leaf; – parsley and dill.

Prepare chicken broth. Rinse the chicken, put in a saucepan and cover with cold water. A bird that is too large can be cut into pieces beforehand. Bring water to a boil, remove foam, and reduce heat. Add bay leaves, black peppercorns, salt, and halved onion to a saucepan. Boil the broth until tender, then strain until the soup is clear. Remove the chicken, remove the meat from the bones and chop it.

If you want to get a diet version of the soup, refrigerate the finished broth, and then remove the frozen fat from its surface.

Peel the carrots and cut them into wedges or cubes. Pour broth into a clean saucepan, add carrots and bring to a boil. Boil the soup for 5 minutes, then add the noodles. After 3 minutes, the dish is ready. Place the chicken in a saucepan, add salt and freshly ground black pepper if necessary. Pour the soup into bowls, sprinkle with finely chopped parsley and dill and serve.

Noodle soup with meatballs

Soup with meatballs is also very appetizing. Boil it in meat broth – cooked or cooked on your own.

You will need: – 1,5 liters of ready-made meat broth; – 200 g ground beef; – 1 glass of vermicelli; – 1 potato; – 1 carrot; – 1 onion; – salt; – freshly ground black pepper; – black peppercorns; – 1 tablespoon of dry dill greens.

Start by making the meatballs. Salt the prepared ground beef and knead well with your hands. Roll small balls out of it and place them on a plate greased with vegetable oil.

You can use pork or chicken instead of ground beef.

Peel the onion and chop it finely, then fry in hot vegetable oil. Grate the carrots on a coarse grater and place with the onion. Saute the vegetables for 5-7 minutes, stirring occasionally. Peel and dice potatoes.

Bring ready-made broth to a boil, add black peppercorns. Place the potatoes and meatballs in a saucepan and cook for about 5 minutes. Then add the vermicelli, salt. Cook everything together for another 3 minutes, put the carrot and onion roast in a saucepan and cook until tender. Turn off the heat and add dry dill to the soup. Cover the dish with a lid and let it brew a little, then pour into plates.
