Redcurrant juice is useful in the house both in hot summer and in cold winter. You need to cook it according to a special technology that allows you to save most of the nutrients contained in the berries.
What is useful redcurrant juice
Red currant juice is beneficial in the heat, as it quenches thirst well, and in winter it helps with temperature, feverish conditions. It is also necessary for digestion:
- neutralizes nausea;
- suppresses vomiting;
- excites the motor function of the intestine;
- has a mild laxative effect, helps to cope with chronic constipation;
- has choleretic properties;
- improves appetite;
- activates the digestive activity of the stomach, intestines.
The product eliminates spasms and pain in spastic colitis. In addition, it increases the excretion of urine, sweat, along with which the excretion of salts occurs. It has anti-inflammatory, hemostatic properties. It is good to take it warm for sore throats, acute respiratory infections, acute respiratory viral infections, influenza. This is an excellent remedy for kidney stones, as well as jumps in blood pressure and varicose veins.
How to cook redcurrant juice
The technology for making redcurrant fruit drinks includes a moment common to all recipes. Berries should be clean, sorted from twigs and leaves. They also need to be crushed to separate the juice, or grind them to a mushy mass.
In most recipes, the main emphasis is on carrying out the most gentle temperature treatment of the currant drink in order to preserve useful chemical elements in it. Boil, as a rule, you need only cake. This makes it possible to obtain a rich taste of the drink, provided that all vitamins and other substances are preserved. Add redcurrant juice to the already cooled broth.
Frozen red currant juice recipe
You can also prepare redcurrant juice (see recipe with photo) from frozen berries. Take them out of the freezer and let them sit at room temperature for a while.
Ingredients:
- frozen berries – 0,2 kg;
- water – 1,5 l;
- granulated sugar – as needed.
In a deep bowl with a wooden crush, grind the currants to a puree state and pass through a fine sieve. Place juice with pulp and squeezes from berries in a separate bowl. Place the cake in a pot of water and cook for about 10 minutes. Add sugar after boiling. In the meantime, send the juice to the refrigerator.
Cool hot fruit drink and mix with juice from the refrigerator. Put it on fire again and heat it up to + 90-95 degrees, but do not boil. May be strained before use.
Ingredients for another recipe:
- currant (red, s / m) – 300 g;
- currant (black, s / m) – 300 g;
- granulated sugar – 300 g;
- water – 4 l.
Place the currants in a blender, cover with sugar and add a little water. Beat everything and pour the resulting mushy mass into a saucepan. If the blender is small, you can do this one by one: first grind the red currant with half the sugar, then the black one. Add water and put juice on fire. As soon as it boils, you can turn it off.
Morse from fresh red currants
Take currants ripe, not spoiled. Wash it well from dust, let it dry. Pre-sort to remove twigs and various impurities.
Ingredients:
- berries – 0,3 kg;
- water – 1 l;
- granulated sugar – 5 tbsp. l.
Transfer the berries to a comfortable deep bowl and lightly crush them with a fork. Then rub the berry puree through a sieve. The cake that remains after this, transfer to a pot of water. Bring to a boil and cook at a temperature of +100 degrees for 5 minutes. Then add sugar, stir well and turn off the gas. In total, the solution should boil for no more than 7 minutes.
After cooking, fruit juice should stand under the lid for a while to stretch more, for at least half an hour. Then strain the drink and squeeze the cake well – it will no longer be useful and you can safely throw it away. Then you should combine the cooled broth with previously squeezed red-currant juice. Combined 2 drinks mix well and pour into a jug. Cool to room temperature or send to the refrigerator, you can drink.
Red currant juice without cooking
Cooking, even if minimal, kills many useful substances found in the redcurrant drink. Therefore, if desired, you can do without it.
Ingredients:
- currants (red, fresh) – 50 g;
- raspberries (frozen) – 50 g;
- cranberries (frozen) – 50 g;
- blueberries (frozen) – 50 g;
- water – 1-1,5 l;
- ginger (fresh) – 10 g;
- sugar – 70 g;
- cinnamon – 1 stick;
- star anise – 1 asterisk;
- cardamom (in grains) – 2 pcs.
Assorted berries and sugar are poured into a teapot for tea leaves. You can also add citrus peel – it gives a new interesting note to the drink. Finely chopped apple pieces go well with berry juice. Pour fresh boiling water, stir and add all other ingredients (spices and ginger). Leave with the lid closed for 20 minutes.
Ingredients for another recipe:
- currant (red) – 0,5 kg;
- water – 1,2 l;
- sugar (honey, sweetener) – to taste.
Beat the berries in a blender with sugar and cold boiled water. Leave to infuse, then place in the refrigerator. Shake before use, as the pulp tends to settle to the bottom.
Red currant honey drink
If desired, sugar in recipes for the preparation of currant juice can be replaced with honey. In this case, the drink will be even healthier and acquire additional flavors.
Ingredients:
- berries – 300 g;
- water – 1 l;
- honey to taste.
Place the washed and de-stemmed berries in a sieve placed on top of a deep plate. It is good to crush them with a wooden pestle until all the juice flows out. Next, boil currant cake in water for 20-30 minutes. Wait for cooling, strain and combine it with juice and honey. Mix well, put in a cold place.
Red currant ginger juice
Ingredients:
- currants – 0,4 kg;
- honey – 0,1 kg;
- water – 1,5 l;
- ginger – 10 g;
- cinnamon – ½ sticks.
Mash the berries and squeeze out the juice with gauze. Pour the remains in the form of skins and bones with water and put on fire. Throw in the ginger, chopped into small pieces. When the liquid boils, add cinnamon and turn off immediately. Keep covered until cool. Then remove the sediment, add honey and juice, stir.
Morse of oranges and red currants
Ingredients:
- currants – 0,4 kg;
- orange (juice) – 1 pc.;
- water – 2 l;
- sugar – 0,15 kg;
- cinnamon to taste.
Squeeze the juice from the orange and red currants. Place the remaining skins and cake in a saucepan, add water and cook for 2-3 minutes. Then cool, strain and combine with sugar, stir everything. At the very end, pour in the juice.
Contraindications to redcurrant juice
Despite the beneficial properties of redcurrant juice, it also has contraindications. There are a number of cases when this tasty and healthy drink can be harmful and cause such pathologies:
- gastritis;
- ulcer;
- hepatitis;
- poor blood clotting, such as hemophilia.
Some people who are prone to manifestations of food allergies may experience intolerance to the product. This is usually expressed in skin rashes (urticaria) and some other symptoms.
Terms and conditions of storage
Store-bought fruit drinks have a much longer shelf life than home-made ones, as they undergo a sterilization process. But this negatively affects its useful properties. After opening the package, the shelf life of the product is drastically reduced. It should be consumed within a day. Homemade juice at room temperature can be stored for a maximum of 12 hours, in the refrigerator – 3 days.
