Recipe: the best pesto, ready in 5 minutes!
Because pesto is THE sauce that goes with as many dishes as possible during the summer, we thought that sharing our dietitian’s best pesto recipe with you would make you happy!
The recipe
Recipe :
- 3 large bunches of fresh basil with large leaves
- 2 cloves of garlic
- 30 g pine nuts
- 40 g freshly grated Parmesan
- 5 cl olive oil
- 1/2 tsp. to c. fleur de sel
Crush the fleur de sel in a mortar then add the washed and dried basil leaves. Pound then add the garlic cloves that you have previously peeled and crushed. Crush again to obtain a thick puree. Add the pine nuts and mash. Add the Parmesan and olive oil then mix. It’s already ready!
Ideas for using pesto:
- In the pasta… of course! Heat the pesto over very low heat then add it to your pasta just after draining it. You can also add your pesto – cold this time – in your pasta salads.
- To make your vinaigrette and season your green salad as well as all your mixed salads! Reduce the amount of oil and add a tablespoon of pesto to your dressing. Guaranteed success!
- For the aperitif! Spread pesto over the entire surface of a puff pastry. Add grated Comté then roll the dough. Store it for a few hours in the refrigerator in cling film to allow the dough to harden. Take the latter out of the refrigerator, remove the stretch film and cut small sections that you will place on the baking sheet. Bake for a few minutes at 180 ° C and serve immediately!
- To garnish your homemade pizzas, sandwiches and bruschetta! Here is a rich idea: replace the tomato coulis or the mustard with pesto. You will make people happy around you!
