On the processed chicken carcass, a longitudinal incision is made along the spine and the entire skin is cut off, leaving a layer of pulp up to 1 cm thick. Minced meat is prepared from the rest of the pulp. The pulp with the addition of pork is passed through a meat grinder two to three times. then, raw eggs, milk are added through the pulverizing machine in several steps and knocked out. Put bacon, pistachios or green peas, salt, pepper, nutmeg, cut into small cubes, into the mince and mix. The resulting minced meat is filled with the skin, the incision is sewn up and the product is shaped like a whole carcass, wrapped in a napkin or parchment, tied with twine and boiled in broth at a low boil for 1-1,5 hours. The finished chicken is cooled in broth, placed under a light press and placed in refrigerator for shaping. When on leave, the chicken is cut 1-2 pieces per serving, garnished, the sauce is served separately. Bones are removed from the processed pig, cut along the body (along the belly). The incision is partially sutured, the pig is filled with minced meat through the remaining hole, after which the hole is sewn up. Minced meat is prepared in the same way as for stuffed chicken, but instead of chicken pulp, pig pulp is used. The prepared pig is wrapped in a parchment sludge napkin and tied up. The piglet is boiled together with the removed bones for 1,5-2 hours at low boil. Salt is added at the end of cooking. The finished piglet is cooled along with the broth and then cooked and released like stuffed chicken.
