Finely chopped onions are lightly sautéed. Fresh mushrooms, pre-stewed until cooked, or dried boiled mushrooms, cut into thin strips and fry together with onions for 3-5 minutes. Then the fried onions and mushrooms, black peppercorns are placed in the main red sauce and boiled for 10-15 minutes. At the end of cooking, prepared white dry wine is added to the sauce (p. 306), chopped parsley and tarragon and seasoned with margarine. The sauce can be prepared without wine and is served with fried game, natural fried cutlets and other meat dishes
