Method of preparation
Prepared beef kidneys and heart are cooked separately. Onions are cut into half rings and sautéed with tomato puree. Salted cucumbers are cut into slices and simmered. Pre-soaked beans are boiled in broth or water until half cooked, diced potatoes are added, brought to a boil, combined with sautéed onions and tomato puree. 10 minutes before readiness, boiled pickled cucumbers, boiled kidneys and a heart, cut into slices, salt, spices are introduced. On leave, the pickle is seasoned with bacon, crushed garlic, sprinkled with finely chopped parsley.
