Method of preparation
Egg yolks are ground with sugar, diluted with cold milk; this mixture is poured into vanilla crackers, broken into small pieces, and left for 15 minutes to swell. When the crackers are swollen, add sorted out and washed raisins, candied fruits, and then gently introduce the whipped proteins into the foam. After that, the mass is mixed and laid out in oiled tins and baked in an oven. The pudding can be steamed. The molds, sprinkled with sugar, are filled to 2/3 of the volume with the prepared mass and boiled. Pudding is poured with apricot sauce and served hot. Pudding can also be served cold with milk or jelly (200 g per serving).
