Method of preparation
Freshly peeled washed cabbage is chopped, then put in a layer of no more than 3 cm on a baking sheet with melted fat and fried until cooked in an oven at a temperature of 180-200 ° C. The finished cabbage is cooled, salt, browned onions or hard-boiled chopped eggs, chopped greens are added parsley. Salt cabbage before frying, as well as uncooled after frying, is impossible, since moisture is released from it, which reduces the quality of minced meat. If fresh cabbage is bitter, it is pre-blanched for 3-5 minutes, thrown back, dried and then fried. Fresh cabbage can be sautéed on the stove with frequent stirring.

Minced fresh cabbage rich in vitamins and minerals such as: vitamin C – 40,1%, vitamin E – 14,7%, potassium – 14,3%, chlorine – 26,5%, cobalt – 46%, molybdenum – 18,3%, chrome – 12%
- Vitamin C participates in redox reactions, the functioning of the immune system, promotes the absorption of iron. Deficiency leads to loose and bleeding gums, nosebleeds due to increased permeability and fragility of the blood capillaries.
- Vitamin E possesses antioxidant properties, is necessary for the functioning of the gonads, heart muscle, is a universal stabilizer of cell membranes. With a deficiency of vitamin E, hemolysis of erythrocytes and neurological disorders are observed.
- potassium is the main intracellular ion that takes part in the regulation of water, acid and electrolyte balance, participates in the processes of nerve impulses, pressure regulation.
- Chlorine necessary for the formation and secretion of hydrochloric acid in the body.
- Cobalt is part of vitamin B12. Activates enzymes of fatty acid metabolism and folic acid metabolism.
- Molybdenum is a cofactor of many enzymes that provide the metabolism of sulfur-containing amino acids, purines and pyrimidines.
- Chrome participates in the regulation of blood glucose levels, enhancing the effect of insulin. Deficiency leads to decreased glucose tolerance.
