Method of preparation
50% fat is used for sautéing vegetables. Carrots and turnips are cut into slices or wedges, potatoes – into cubes or wedges, white cabbage – with checkers, cauliflower is sorted into small inflorescences, beans are cut into 2-3 parts. Some varieties of white cabbage and cauliflower are pre-blanched to remove bitterness. Sauteed carrots and turnips, potatoes, then cabbage are placed in boiling water, boiled at low boil until tender. 5-10 minutes before the end of cooking, put green peas or beans, previously boiled, pour in hot milk, add salt and bring to a boil. When on vacation, fill with oil.
