Method of preparation

Under the marinade, you can cook any fish – sturgeon, pike perch, pike, navaga, smelt, etc. Prepare the fish – wash, clean, trim the fins, tail, head. Large fish (for example, pike perch, sturgeon) must be cut into pieces, small (smelt, navaga, etc.) should be left intact. Salt the prepared fish, sprinkle with pepper, roll in flour, fry in vegetable oil, cool and pour marinade.To prepare the marinade, peel and wash 2-3 carrots, parsley, 2-3 onions, cut them into thin slices or straws (grate the roots on grater with large holes), fold into a saucepan, add 3-4 tbsp. tablespoons of vegetable oil and lightly fry (for 10-15 minutes). Then add 1 cup of tomato puree and spices to the pan – bay leaf, pepper, 3-5 pcs. cloves, a piece of cinnamon, cover and simmer for 15-20 minutes with occasional stirring. After that, pour 0.5 cups of weak vinegar, 1-1.5 cups of broth or water into a saucepan, boil, season with salt, sugar and cool. Serve marinated fish in a salad bowl or in a deep saucer, sprinkle it with green onions or dill before serving.
