Method of preparation
Cut boiled potatoes, carrots, beans and hard-boiled egg whites into cubes and place in a bowl; add green peas, some finely chopped boiled or fried meat, pour over the sauce. Stir the vinaigrette and put on for 15 minutes so that the vegetables are well saturated, then add salt, vinegar and put on a dish. For the sauce: rub the yolks of hard-boiled eggs, grind them with one tablespoon of mustard, pouring in vegetable oil little by little, add lemon juice or vinegar.
