It may be necessary to soak the mushrooms for 8-12 hours in cold water before eating to remove excess salt. When serving, they are most often seasoned with butter or sour cream. Dill, oak leaves, cherries, horseradish, garlic, used in salting, give the mushrooms a wonderful taste and spicy aroma.
Tip: it is quite difficult to find fresh dill in late autumn, so it can be harvested in the summer. Dill is collected, cut into pieces and, mixing with a lot of salt, placed in glass jars. In this form, in a cool place, it can be stored for a very long time without losing its smell.
Ingredients for salted mushrooms according to the “cold recipe”

To obtain one kilogram of salted mushrooms in a cold way, the following ingredients will be required:
- 1 kg mushrooms (white and/or black)
- 5-6 cloves of garlic
- 5 peas black pepper
- 3 oak leaves
- 3 cherry leaves
- 1 large sheet of horseradish
- a bunch of ripe dill with an umbrella
- salt – to taste
The preparation time for milk mushrooms according to the “cold recipe” is 3 days for soaking + 30 minutes + 30 days for aging.
How to salt milk mushrooms in a cold way
1. Before salting milk mushrooms in a cold way, the mushrooms must be sorted out, washed, poured with cold water, left for 3 days at room temperature. Change water 2 times a day.
2. Throw the mushrooms in a colander, rinse with cold water.
3. Peel the garlic, cut into slices.
4. Line the dishes for salting with horseradish leaves.
5. Lay the soaked mushrooms, sprinkling each layer with salt and shifting with leaves, garlic, dill and pepper.
6. Place a plate on the mushrooms according to the diameter of the container.
7. Put oppression.
8. Cover with gauze or cloth and tie. Keep salted milk mushrooms cooked in a cold way in a cool place for 30 days. Store also in a cool place.
