Ingredients
To prepare this recipe, you need fruits of late varieties, Antonovka is best. Take:
- apples – 1 bucket;
- wheat straw – 1 bunch (about 0,5 kg);
- blackcurrant leaves – 10 pcs.
To prepare a brine for every 3 liters of water:
- rye flour – 2 tbsp. spoons;
- salt – 2 tbsp. a spoon;
- sugar or honey – 50 g;
- dry mustard – 3 tbsp. spoons.

Measure the right amount of water as indicated in the previous recipe.
Rinse the straw, pour boiling water over it, let it cool and wring it out thoroughly.
Boil water, dissolving salt, sugar and adding dry mustard powder in it. Pour in the rye flour dissolved in a small amount of cool liquid. Mix well, let cool.
At the bottom of a clean bucket, lay some steamed straw and currant leaves, lay a row of apples, and wheat stalks on top. Fill the bucket layer by layer, fill it with wort, put oppression on top.

- cabbage of late varieties – 4 kg;

- sugar – 2 tbsp. spoons;
- water.
Choose juicy cabbage, and sweet carrots. Apples must really be small, otherwise they take a long time to cook.

Chop the cabbage, rub the carrots on a coarse grater. Stir, add sugar, salt, rub well with your hands so that the juice comes out.
In a clean bucket, first put a layer of cabbage, then apples, chopped vegetables again on top, and so on to the top. Remember to carefully pack the contents.
There should be a cabbage layer on top. Pour the remaining juice into a bucket, put oppression on top.

- sugar – 200 g;

- rye flour – 100 g;
- cherry and blackcurrant leaves – 7 pcs.;
- boiled water – about 5 liters.
Cooking Guide
Boil water by adding salt and sugar. Dilute rye flour with a small amount of cold liquid, pour into boiling water. Stir thoroughly, let cool.
At the bottom of the bucket, lay half of the clean leaves of currants and cherries, tightly lay the apples, sprinkling them with cranberries. Pour in cooled brine. Lay the remaining leaves on top and set oppression.
After 2 weeks, take the bucket to the cellar or basement.
