Method of preparation

Prepared dried mushrooms are soaked in cold water, boiled in the same water, washed and cut into strips. Fish with a bone skeleton is cut into fillets with skin without bones, fish of the sturgeon family – into links with skin without cartilage, cut into portions and allowed to cook until tender. The fish is removed from the broth, the broth is filtered. Fresh tomatoes are cut into slices, onions are cut into half rings and sautéed with tomatoes. Fish broth is combined with strained mushroom broth, brought to a boil, potatoes cut into cubes are placed and boiled. Sauteed vegetables and mushrooms, salt, spices are introduced 10 minutes before readiness. At the end of cooking, add garlic pounded with salt. When leaving, put fish in the soup and sprinkle with finely chopped herbs.
