Make icing sugar from sugar. Melt the butter in a saucepan, knead the flour and heat, then, stirring occasionally, gradually add the cream. Heat the mass over low heat until it begins to separate from the edges of the pan and mix in a lump. Cool the dough, stir in the egg yolks, half the amount of powdered sugar, vanillin, grated almonds. Beat the whites with the rest of the icing sugar. Place a quarter of the proteins in the refrigerator, carefully add the rest of the proteins to the dough. Place the dough in a greased pan and bake the pudding in the oven. After 15 minutes, cover the surface of the pudding with whipped whites and continue to bake until the pudding comes off the edges of the mold and the mass of egg whites turns yellow. Serve hot or cold with fruit juice.
