Method of preparation

First way. For the egg-milk mixture, the eggs are ground with sugar, boiled hot milk is added in a small stream and heated to 70-80 ° C. After that, prepared, brought to a boil, gelatin is introduced with stirring. For vanilla cream, vanillin is added to the strained egg-milk mixture. For coffee cream, the mixture is prepared with the addition of coffee infusion (50 g of coffee per 150 g of boiling water). For chocolate cream, cocoa powder pounded with sugar or refined powder is added to the hot egg-milk mixture and whipped in the cold until a thick fluffy foam is formed. In the whipped cream, stirring continuously, pour the egg-milk mixture cooled to room temperature. The second method. Vanillin or cocoa powder, ground with refined powder, is added to the whipped cream. Then, with continuous stirring, add a thin stream of slightly cooled dissolved gelatin. For coffee cream, gelatin is dissolved in a strong coffee infusion. The finished cream is quickly poured into molds and cooled. Before leaving, the form with the cream is immersed in warm water for a few seconds, then, after taking it out of the water, it is shaken and the cream is spread on a vase or dessert plate. On leave, it is poured with coffee syrup, or chocolate syrup, or strawberry or raspberry or cherry sauce (recipe No. 576) -30 g per serving.
