Yeast is diluted in warm milk or water at a temperature of 30-35 C. Dough is prepared from wheat flour: the flour is sifted and poured into warm milk or water (1/3 of the norm prescribed by the recipe), having previously diluted the yeast in it, and put in warm a place. After the dough rises and settles, pour in the rest of the milk or water, add buckwheat flour, mix until a homogeneous mass is formed. The kneaded dough is left in a warm place (25-35 ° C), during fermentation the dough is kneaded. After the dough has increased in volume, add egg yolks, melted margarine, sugar, salt, mix and add whipped egg whites. The cakes are baked on both sides in heated cast-iron pans, greased with fat.
