A complete source of protein, rich in all essential amino acids, can be obtained in the season lasting from the first frost in September to the beginning of winter. We will also not be disappointed when looking for unsaturated fatty acids, especially for the sake of the exceptionally favorable proportions of omega-3 to omega-6 acids.

Find out what other properties kale, underestimated among Poles, is famous for!

Carotenoids for the eyes

Vitamin A in the form of beta-carotene is wonderfully absorbed by our body. It is of great importance for the prevention of night blindness and dry eye syndrome. Proper vision is also influenced by zeaxanthin and lutein, which are part of the macular pigment, which is why kale is recommended to eat people at risk of developing and aggravating vision defects. Both zeaxanthin and lutein protect the eyes from the effects of excessive solar radiation and protect against the harmful effects of free radicals. Vitamin A helps prevent skin dryness.

Invaluable vitamin K

Kale enriches our body with vitamin K, which is necessary for the proper course of many processes in our body. It stimulates blood coagulation and calcium metabolism, which, if absorbed regularly, will result in less susceptibility to injury. In addition, vitamin K protects us against cancer, including liver, colon, gallbladder, bladder, prostate, breast and ovarian cancer.

For the ladies

It protects against breast cancer, also due to the presence of indoles that limit the production of active estrogens.

Health Vitamin C

We all know that vitamin C increases the body’s immunity and captures free radicals. In addition, it is essential in the production of connective tissue, accelerates wound healing and bone fusion, and also stops the formation of bruises, hemorrhages, and bleeding gums. Its deficiencies are conducive to, among others: muscle and joint pain, fatigue, apathy and stomach diseases. Importantly, it protects the body against cancerous changes, lowers blood pressure, ensures the smooth functioning of the circulatory system and heart, protects against atherosclerosis and cholesterol build-up.

For those who don’t drink milk

The calcium content in kale matches its presence in milk, which is responsible for bone mineralization, muscle contraction and optimal body weight. The ratio between calcium and phosphorus in kale is perfect.

Iron

Kale in 100 g covers 1/5 of the daily requirement for iron, the absorption of which is increased by vitamin C.

Flavonoids

Flavonoids have anti-inflammatory and antioxidant properties.

Defeat Helicobacter pylori!

Sulforaphane fights Helicobacter pylori, thanks to which it protects against gastric and duodenal ulcers, as well as against gastritis.

Not for everyone

Geitrogens lower the concentration of iodine in the body, and therefore interfere with the synthesis of thyroid hormones and lead to its hypertrophy. On the other hand, oxalates reduce the storage of calcium in the bones, contribute to arthritis and heart disorders. They are able to cause kidney stones because they accumulate in the kidneys and urinary tract. They weaken sperm viability.
