The use of wild garlic in cooking

Ramson is the most widespread due to its medicinal properties, unpretentiousness, high winter hardiness and good taste. Given the garlic aroma, the plant is used in cooking rather carefully, so as not to spoil the taste of the dish. Leaves are especially popular; before cooking, they must be thoroughly washed and cleaned, dried.

Ramson can become the main component of spring salads, while it does not need to be cooked. It is enough just to chop the leaves finely, grind with a crush or mash with your hands until the juice is released and send it to the rest of the salad ingredients (tomatoes, cucumbers, bell peppers, etc.). The aerial part of wild garlic and bulbs are used as a spice.

Especially good are spring soups and cabbage soup from wild garlic, less often it is used as a seasoning for okroshka. It is recommended to put it in the first courses at the very end of cooking, so that it does not have time to lose its taste and smell, and also retains useful substances. This amazing plant gives a special piquancy to spreads and sauces. Use the leaves for the Pesto sauce, where wild garlic can be added instead of basil. Wild garlic goes well with soft cheese, sour cream and cottage cheese. Such sauces will become a useful and tasty spread for sandwiches, and it will not be difficult to make them yourself.

Ramson can be prepared for future use for the winter, it is salted, pickled, fermented and dried. From the soft and young fruits that were harvested in June immediately after flowering, you can prepare a dish that tastes like capers. Take a handful of wild garlic fruits, wash and drain off excess water. Add a tablespoon of salt and leave overnight, in the morning, fold the fruits on a sieve and transfer to a saucepan. Add a tablespoon of sugar and pour over 100 milliliters of vinegar, put on fire and bring to a boil, cook for three minutes. Transfer to a glass jar, close the lid, and store in the refrigerator for no more than two weeks. The blank will be an excellent addition to cheese, sauces, meat, cottage cheese.
