Rachelle

Rachelle (Rachel) is a sparkling wine drink produced by the Rostov sparkling wine factory. The enterprise is one of the industry leaders in the southern part of Russia. The plant maintains the long tradition of Don winemaking. Every year, 13 million bottles of champagne roll off production lines.

Historical information

The Donskoy factory of sparkling wines was built in Rostov in 1936 by order of the government. A year later, the first batch of sparkling wine was released, and by 1942, the production volume was already more than 4 million bottles per year. During World War II, the city was captured by the German invaders. The equipment was taken to Georgia, but all stocks were lost.

In the first year after the end of hostilities, employees began to restore the plant. The engineers reconstructed and modernized the equipment. At the enterprise, a revolutionary at that time method of fermentation in cooled tanks was introduced. By the 50s, the first harvest was given by their own vineyards. In the future, the sparkling wines of the plant won awards at international competitions more than once and were exported to the countries of the socialist camp.

Currently, the Rostov plant produces several dozen types of sparkling wines. Premium varieties are aged on lees for 1-2 years. Rachelle champagne appeared in the assortment of the enterprise in 2014. For its production, white table wine materials are used. The drink is created in the style of popular wine cocktails with a low alcohol content – the strength of the wine is only 7,5%.

Production features

Wine materials are supplied to the enterprise from the Rostov and Odessa regions, as well as from the Taman Peninsula. The wines are blended, which are settled in enameled containers for up to three weeks.

In production, the method of continuous champagne is used, when the flow of wine passes under pressure through the fermentation chambers. At the entrance to the future sparkling, yeast is added, and at the exit – expeditionary liquor. This method greatly improves performance while maintaining quality.

Interesting Facts

Since the first years of operation, the plant has been one of the most advanced enterprises in the industry. In 1937, technologists developed a special strain of yeast for champagne – “Rostovsky 21”, which is still used today. During the war years, the culture was carefully evacuated along with the rest of the equipment.

In September 2019, Rostov winemakers redesigned Rachel champagne. The bottles have acquired a slightly elongated shape, and the elegantly and concisely designed label has become asymmetric.

Types of champagne Rachel

Rachelle Dry, 7,5%

Dry sparkling wine of light straw color with a sugar content of 25 g per liter. The aroma is dominated by notes of muscat grapes. The taste is harmonious, with a good balance of sweetness and acidity.

Rachelle Semi-Sweet, 7,5%

Semi-sweet wine drink, rich in carbon dioxide, which does not disappear for a long time from an open bottle. The aroma is subtle, fresh fruity notes are felt. The taste is pleasant and delicate, without excessive sweetness. Leaves a musky aftertaste.

Rachelle Sweet, 7,5%

Sweet sparkling wine of golden color with a sugar content of 85 g per liter. Aroma of nutmeg-almond. The taste is rich with hints of ripe fruits and grapes. Recommended by the manufacturer as a drink for romantic meetings.
