Quinoa with pumpkin and vegetables
 

Ingredients: 200 grams of pumpkin, 150 grams of quinoa mix, 100 grams of carrots, 150 grams of pepper, 100 grams of onions, 10 grams of green onions, 20 grams of pine nuts, 2 sprigs of parsley, 1 tablespoon of olive oil, salt and pepper – to taste.

Preparation:

Preheat oven to 200 degrees. Cut the pumpkin into small cubes, place in a baking dish and bake in the oven for 15-17 minutes.

 

Boil the quinoa at this time. Pour 200 ml boiling water over the quinoa, cover and simmer for 10-12 minutes. Finely chop carrots, peppers, onions and green onions, parsley. Heat 1 tablespoon of olive oil in a skillet and sauté the onions, carrots and peppers over medium heat for 5-7 minutes. Combine quinoa, vegetables, pumpkin, green onions, salt and pepper to taste.

Place on a plate, sprinkle with pine nuts and parsley.
