Quinoa, health benefits for children
Rich in vegetable proteins, quinoa also provides fiber, which is useful for regulating transit. It is well provided with omega 3, which are beneficial for the proper functioning of the brain and the heart in particular. And, it is a source of minerals (iron, copper, etc.). Naturally gluten-free, it is an ally of choice for people with gluten intolerance.

To choose it well. White quinoa has a delicate taste. But, there is also red or black quinoa, which has a more pronounced taste. So, that mixtures of these three quinoas. They are found all year round but the high season is in April-May.
To prepare it. It is rinsed well with cold water in a colander to remove traces of saponin and the bitter taste.
Baking. Typically, it cooks in about ten minutes in about 1,5 times its volume of boiling water. Once cooked, let it swell for a few minutes in the pan. Normally no need to drain it.
Quinoa: how to cook them?
In salad. Served cold, with tomatoes and cucumbers for a revisited tabbouleh. Or with avocados and corn for an original salad. It also goes well with diced grapefruit and feta for a refreshing entry.
In stuffed vegetables. We take the flesh of the vegetables (tomatoes, eggplants, zucchini …), we mix it with cooked quinoa, then we stuff the hollowed-out vegetables with this stuffing, a little grated cheese and hop in the oven.
In accompaniment. Meats, fish… quinoa goes well with everything. And, it changes pasta or rice.
A dessert. It replaces rice in a quinoa pudding recipe with a fruit coulis. In a soft cake, it allows to reduce the quantity of flour (we add the cooked and cooled seeds in the preparation).
