Quince liqueur is a fragrant dessert drink with a characteristic taste of fruits and a slight sourness in the aftertaste. The technology of preparation is based on maceration (infusion) of raw materials on vodka or alcohol along with sugar.
You can make liqueur from any variety of quince: ordinary, Japanese, nutmeg, pear and others, as long as the fruits are ripe, without rot and mold. Store-bought vodka, diluted to 40-45% ethyl alcohol and well-purified distillate (moonshine) without the smell of fuselage are suitable as an alcohol base.
Ingredients:
- quince fruits – 0,5 kg;
- sugar – 400 grams (or 250 grams of fructose);
- vodka (alcohol 40-45%, moonshine) – 0,5 liters;
- ginger root – 25-30 grams (optional).
Fructose softens the taste of quince liqueur, but regular sugar will do. Ginger root adds spicy notes of spiciness and sweetness to the drink, making the taste slightly hot, this is not for everyone.

1. Wash the fruits well. Cut in half, remove the core, bones and ponytails, which give bitterness.
2. Cut the pulp into small slices 2-3 cm long. Chop the ginger root (if used) into 3-4 cm pieces.
3. Put quince slices in a jar for infusion, add ginger.
4. Pour in sugar. Close the jar tightly with a lid, shake it several times, put it on a windowsill (another bright place) for 2-3 days. Shake 3-4 times a day.
5. When the quince starts the juice, pour in vodka (another strong alcohol), mix, close the lid.
6. Remove the jar for 25-30 days in a dark place with room temperature. Shake every 2-3 days.
7. Filter the finished homemade quince liqueur through 2-3 layers of gauze, squeeze the pulp well. Squeezes are no longer needed. Taste, add more sugar if desired and stir.
8. Close the jar (bottle) with the liqueur tightly, transfer to a dark cool place (cellar or refrigerator), leave for at least 3-4 days to stabilize the taste. The longer the holding time, the better.
If a precipitate appears, you can filter the drink through cotton wool. Filtration affects only the color (removes turbidity) and does not affect the taste. The output is up to 0,7 liters of quince liqueur with a strength of 24-28%. Shelf life – up to 4 years.
