A fruit such as quince, people began to use for harvesting a long time ago, more than four thousand years ago. At first, this plant grew in the North Caucasus, and only then it began to be grown in Asia, Ancient Rome and Greece. Already in antiquity, information was obtained about the benefits of this fruit. In myths, the quince or golden apple was called a symbol of love and fertility.

Recipe No.1
For quince jam you will need:
- quince – 3 kg;
- granulated sugar – 2,5 kg;
- walnut kernels – 1 cup;
- water – 7 glasses.
Features of preparation
- Quince thoroughly washed and dried. According to this recipe, we do not peel the peel from the fruit, but the middle ones must be removed. Cut the fruit into quarters and then into cubes.
- There is no need to throw away the peel and core with seeds, as they contain a lot of essential oils (tannins in the seeds) that give a special flavor to the finished jam. Therefore, on their basis, we will cook syrup and pour fruits over them. We put the peel and middle in the pan, add water and cook for a quarter of an hour. Then we throw the contents of the pan into a colander to drain the syrup.
- Immediately put the chopped quince into the hot syrup, put the pan on the stove and boil for at least 10 minutes over medium heat. Remove the foam that appears with a slotted spoon or spoon. Then we strain the liquid.
- Drain it into a saucepan, add granulated sugar and boil for 5-6 minutes.
- Pour fruits with sweet liquid, cook for 10 minutes and leave for 10-12 hours, covering the vessel with a towel.
Quince jam according to the recipe is boiled in several steps, only in this case the pieces are transparent.
- After 12 hours, we cook the quince jam according to the recipe again, but with walnuts. How to grind them, decide for yourself. Sometimes whole nucleoli are added. We leave again.
- The total cooking time is 40 to 50 minutes. You need to focus on the state of the syrup. In addition, the finished jam with walnuts should be dark amber in color.
To store quince jam with walnuts, we use clean, pre-steamed jars. We pack the workpiece hot, cool, turning the lids down. We remove the already cooled jam into the basement or refrigerator.

Quince is the last of the fruits to ripen. Preparations from it are made in the fall. Quince jam with nuts and lemon is a great addition to the assortment of sweet preserves.
We prepare the following ingredients in advance:
- ripe quince fruits – 2 kg 400 grams;
- walnut kernels – 0 kg;
- granulated sugar – 2 kg 100 grams;
- one lemon;
- water – 290 ml.
Step-by-step cooking
Cooking jam does not differ from traditional actions:
- After washing, cut the fruits into 4 parts and remove the core with seeds. Cut each quarter into wedges. So that the fruits do not darken, dip them in water with citric acid.
- Quince jam is made in several stages. In this case, the slices will not lose their shape. Fill the quince with water, add some sugar and cook for no more than 10 minutes from the moment of boiling. We leave for 12 hours.
- The next day, add the rest of the granulated sugar and boil again for 10 minutes.

- While the jam is bubbling, we shift it into jars and roll it up.
