Quince is a unique fruit, which contains trace elements included in the periodic table. The presence of vitamin A, E, a group of vitamins B, make the fruits and their products useful. This fruit goes well with any citrus fruits, but juicy oranges are most often used. Such jam is suitable not only for tea, but also as a filling for pies.
Recipe one, traditional
To prepare quince jam, we need:
- quince already peeled – 3 kg;
- clean water – 7 glasses;
- granulated sugar – 2 kg 500 grams;
- oranges – 1 piece.
Method of preparation
- Wash the fruits thoroughly and dry on a towel. According to this recipe, quince without skin and seeds is required for boiling. Therefore, each fruit is cleaned and cut into medium-sized cubes.
The peel and cores are useful for making syrup, so they are put in a separate saucepan.
- When the fruits are cut, we will prepare the syrup. We spread the quince peel and middle parts in water, bring to a boil and cook over medium heat for a third of an hour.
- After that, the syrup must be filtered and poured while it is hot. Chopped quince, put on the stove and cook for ten minutes.
- Then drain the liquid, pour out the granulated sugar indicated in the recipe and set to boil again.
- Pour syrup into quince and insist half a day.
Judging by the time of infusion, it is better to pour syrup over quince in the evening and cook it in the morning.
- Orange does not need to be peeled, we cut it directly with fragrant skin in the form of squares, just before laying in the jam.
- After 12 hours, when the quince is saturated with syrup and becomes transparent, add the sliced orange and cook from the moment of boiling for about 40 minutes. By the end of cooking, the jam will become fragrant and amber in color.
Jam is stored in sterile jars with a twist. We shift the workpiece into them while hot, turn over, cover with a towel and leave to cool completely. Later we clean in a cool place.
Recipe two, with cinnamon
To prepare a healthy and tasty jam, cook:
- 2000 grams of quince;
- one orange;
- 1500 grams of granulated sugar;
- one tablespoon of ground cinnamon.
For cooking jam, it is necessary to choose ripe fruits without the slightest sign of decay or cracks. After washing with clean water, the fruits must be dried. We do the same with oranges.
Progress:
- From the quince, select the core and cut into pieces. And according to the recipe, the orange must be crushed in a meat grinder along with the peel. The bitterness of citrus is just what you need for quince-orange jam.
- First, quince comes into play, it needs to be poured with sugar into the cooking containers, and add an orange. The mass must be carefully mixed so as not to damage the integrity of the pieces.
- Set aside the bowl with future jam for two hours so that quince juice appears. After that, we send the pan to a small fire. The jam is cooked as usual until the mass thickens. The foam that appears on the surface must be removed, otherwise the jam will turn sour or sugary.
- Ten minutes before the end of the process, add cinnamon. We shift into steamed jars immediately, not allowing the jam to cool. We roll up the containers, turn over. We remove for storage after complete cooling. Jam can even be put on the bottom shelf of the kitchen cabinet, nothing will happen to it.
