How to roast pumpkin and celery
Prepare the pumpkin and celery root for roasting. Rinse them thoroughly in running water, then peel them. Completely remove seeds and pulp from the core of the melons. Heat the sunflower oil in a cast-iron skillet, then roll the pieces of celery and pumpkin in sifted flour and fry on both sides until golden brown. The breading can be replaced: use crushed crackers; first sprinkle the pumpkin and celery in flour and then dip them in a beaten chicken egg. Fried pumpkin with celery and marinade

– celery root (300-400 g); – wheat flour for breading; – vegetable oil for frying; – balsamic vinegar (100 ml); – garlic (2 cloves); – basil greens (2-3 branches); – rosemary or saffron to taste; – salt and ground black pepper to taste.

Prepare recipe ingredients: rinse, drain, peel and chop. Sprinkle the pumpkin and celery pieces with sifted wheat flour and sauté in vegetable oil. Allow excess fat to drain. Prepare the marinade: put crushed garlic, coarse salt and freshly ground pepper in an enamel pan.
Bring liquid to a boil, simmer for 1-2 minutes and remove from heat. Place the fried pumpkin and celery in a glass or ceramic container, sprinkling each layer with spices. Pour the hot marinade over the food and let stand for 2-3 hours before serving.
