Pumpkin puree soup with chicken broth

To make pumpkin soup, place the chicken in a saucepan, cover with cold water, bring to a boil, reduce heat to low and cook, skimming until the chicken is cooked.

How to make pumpkin soup with cheese

Required ingredients: – chicken broth; – 400 grams of pumpkin; – 250-300 grams of cheese; – 50 milliliters of cream; – a little vegetable oil; – salt; – ground black pepper; – a small bunch of cilantro.

Cut the pumpkin pulp into small pieces and fry in vegetable oil. Then pour in some chicken stock, reduce heat to low and simmer, covered, until the pumpkin softens. Transfer the pumpkin mass to a saucepan, crush with a wooden pestle until puree, pour in the chicken broth, salt and pepper to taste, put on low heat, add cream, grated cheese and finely chopped cilantro.

If you don’t like the taste of cilantro, you can replace it with parsley.

Cover, remove from heat. This puree soup, prepared according to the “cheese” recipe, has a particularly delicate taste.

Required ingredients: – 400 grams of pumpkin pulp; – 1 onion; – 1 carrot; – 2-3 cloves of garlic;

– 100 grams of sour cream; – a bunch of greens; – a little vegetable oil; – salt; – ground black pepper to taste.

Fry the garlic in a saucepan in very hot oil. When it becomes brownish, remove it and fry the finely chopped vegetables such as onions, carrots and pumpkin. Pour in a little boiling water, reduce heat and simmer until vegetables are softened. Pound them with a wooden pestle in mashed potatoes, pour in another 1 liter of boiling water, salt and pepper to taste, add sour cream, finely chopped herbs, stir and remove from heat.
