Some will say it’s impossible. But those who have ever tried the liqueur from this dried fruit do not miss the opportunity to enjoy this drink at any time of the year.

A few words about pouring

Prune liqueur has a mild taste with light smoked notes and a delicate smoky aroma. For its preparation, you can use any variety of dried fruits, as long as they are without white bloom and visible signs of rot. It is also worth refraining from overdried prunes, as it has long lost its beneficial properties and aroma.

Food alcohol, vodka, moonshine or inexpensive cognac can act as an alcohol base. Cognac liqueur has woody notes, which are complemented by a light aftertaste of dried fruits.

Simple prunes

In this recipe, it is difficult to indicate the exact amount of granulated sugar, since the sweetness of the main ingredient varies.

You should introduce the sweetener completely, relying on your taste buds.

Ingredients

  1. Prunes – 600 g

  2. Alcohol – 500 ml

  3. Vodka – 2 l

  4. Water – approximately 2,5 liters

  5. Sugar – to taste

Method of preparation

  1. Dried fruits must be washed, pitted and cut into small cubes.

  2. Pour prepared prunes into a glass jar and pour in two types of alcohol.

  3. Close the lid and transfer the container to a dark place for 1,5 months. Shake the contents from time to time.

  4. At the end of the exposure period, drain the infusion and pass it through the filter.

  5. Pour prunes with water (the amount of water should be equal to the drained liquid in the previous step). We leave for three days under the same conditions.

  6. After three days, we drain the flavored water, mix it with tincture and take a sample.

  7. We introduce the right amount of sugar, mix, filter through a cotton or coffee filter.

  8. Pour the finished liqueur into bottles, cool and serve.

Aromatic prune liqueur

So that the liqueur does not turn out too sweet, it is recommended to introduce only 50 g of granulated sugar at the initial stage, and at the final stage, sweeten it according to your taste preferences.

Ingredients

  1. Pitted prunes – 150 g

  2. Vodka – 500 ml

  3. Lemon – 1 pcs.

  4. Sugar – 50-150 g

  5. Vanillin – a small pinch

Method of preparation

  1. We pour boiling water over the lemon, and while it dries, we prepare the prunes.

  2. Pour dried fruits with boiling water, leave for about 3 minutes, and then rinse under cold, running water.

  3. Remove the zest from the lemon and squeeze the juice from half of the fruit.

  4. We put the ingredients in a glass container: prunes, lemon zest and juice, vanillin and granulated sugar.

  5. Pour in the prepared alcohol, shake well and leave for 15 days in a dark place at room temperature. Shake the contents of the container once every couple of days.

  6. The resulting drink should be filtered, take a sample and, if necessary, add more sugar.

  7. Then we pass the prunes liquor through the filter and bottle it.

  8. The strength of the finished product is about 25–33%. Storing the drink in the refrigerator or cellar extends its shelf life by up to two years.
