Proportions of water and pearl barley
Pearl barley – in terms of cooking speed, it takes an honorable second place from the bottom right after beans. But this does not make barley difficult to prepare. In addition to observing the cooking time, you just need to correctly determine the proportions of pearl barley and water – and you will definitely get delicious crumbly and, by the way, very healthy food.
The barley must be rinsed before cooking so that the barley flour is exactly washed off during infusion and cooking. To do this, put the barley in a deep plate and put it under the tap with cold water. It is best to help yourself by fingering the grains between your fingers – the process will not take more than 3 minutes, even if you cook a lot of barley. Then pour water directly into the same plate – a couple of centimeters more than the barley level. You can use the exact proportions for soaking: for 1 cup of pearl barley, 2 cups of water. It is important that with this cereal it is quite spacious – it should swell. After soaking (about 8 hours, you can leave it overnight).
After soaking, it is important to cook the barley in other proportions: the cereal will approximately double during the swelling – where the glass was, you get 2. That is, for each glass of pearl barley you need 2 glasses of water. As it cooks, the pearl barley will absorb almost all the water.
