MUSHROOMS IN BRINE

After boiling the mushrooms in salt water, a little citric acid is added to them, after which it is all poured with hot water with the addition of 10 grams of salt per liter of water.

It is important to remember that the low concentration of salt and acid in such a solution often does not become an obstacle to the activity of various organisms. Based on this, the sterilization of mushrooms should take place at a temperature of at least 90 0C, or at a moderate boil for 100 minutes. It is necessary to fill the jars at a level of about 1,5 cm below the level of the neck. Upon completion of sterilization, the jars are immediately sealed, which, after checking the quality of the sealing, are cooled in a cold room.

After two days, another one or two sterilizations of mushrooms lasting 1-1,5 hours are required. This will destroy the bacteria that remained alive after the first sterilization.

With this method of preservation, mushrooms contain a small amount of salt, so they are used as fresh.

As a result of the fact that canned mushrooms tend to deteriorate quickly after opening, it is necessary to consume them as quickly as possible.

But long-term storage in open jars is acceptable for mushrooms that have been prepared using a strong spicy vinegar solution or benzoic acid.
