Potato salad with mushrooms: the perfect match. Video

You can make a variety of salads from potatoes, both cold and warm. Such a dish will completely replace a whole meal, especially if you supplement it with nutritious mushrooms – fried, boiled or pickled.

Potato salad with fried mushrooms

You will need: – 200 g of honey agarics; – 150 g smoked chicken fillet; – 5 medium-sized young potatoes; – 2 onions; – vegetable oil; – salt; – freshly ground black pepper; – mayonnaise.

Peel honey mushrooms, rinse and boil in salted water. Place the mushrooms on a sieve and chop. Chop the onion into thin half rings. Heat vegetable oil in a skillet and fry the onion in it until soft. Add mushrooms to the pan. While stirring, fry the mixture until tender.

Cut the chicken fillet into strips, boil the young potatoes, cool and peel. Chop the potatoes into thin slices and place on a serving dish. Sprinkle it with freshly ground black pepper, top with chopped chicken and fried mushrooms and onions. Pour a few tablespoons of mayonnaise over the salad and serve.

Warm potato salad with mushrooms and bacon

This delicious salad can be a great substitute for a main course for lunch or dinner. Serve with toasted bread or a baguette.

You will need: – 700 g of young potatoes; – 15 mushrooms; – 200 g of lean bacon; – a bunch of frize lettuce; – salt; – freshly ground black pepper; – a few chives feathers; – olive oil; – one pinch of onion and garlic powder.

Rinse the potatoes thoroughly, do not remove the skins. Cut the tubers into several pieces and boil in salted water. Drain the water, keep the potatoes warm.

Cut the champignons into thin slices and fry in hot olive oil until golden brown. Salt the mushrooms, add a little onion and garlic powder. Cut the bacon into thin strips.

Place the fried mushrooms, potatoes, torn green salad and bacon in a large bowl. Mix everything, sprinkle with ground black pepper and serve, garnished with thin chives.

Autumn salad of mushrooms and sauerkraut

You will need: – 700 g of potatoes; – 500 g of wild mushrooms; – 300 g of sauerkraut; – 2 onions; – vegetable oil; – bay leaf; – salt; – sugar; – black peppercorns; – parsley.

Boil wild mushrooms in salted water with bay leaves and black peppercorns. In a separate saucepan, boil the jacket potatoes, cool, peel and dice. Throw the mushrooms on a sieve, let the water drain.

Finely chop the parsley, chop the mushrooms into slices. Put potatoes, mushrooms, sauerkraut and parsley in a salad bowl, season the salad with vegetable oil and a little sugar. Add salt as needed.
