Potato salad in German cuisine can be an independent dish or used as a side dish. Its fresh taste is favorably set off by sausages, pork leg or other traditional German meat dishes.
The original German potato salad recipe
You will need: – 1 kg of potatoes; – chicken leg; – 2 onions; – 1/2 tbsp. vegetable oil; – 1 tbsp. wine vinegar; – 1 tbsp. Dijon mustard; – half a lemon; – salt and pepper.
Prepare an original dish, the second name of which is Berlin salad. Its recipe is quite simple. Start by preparing the potatoes. Wash the tubers and cook in salted boiling water for 20-25 minutes, until soft. Peel the potatoes and cut into cubes.
Place the chicken thigh in a saucepan, add half the peeled onion and cover with cold water. Bring the broth to a boil and cook for 30-40 minutes, skimming off the foam periodically. Then pour 2 tbsp into a small saucepan. broth, add the remaining finely chopped onion, vegetable oil, mustard and vinegar there, salt and pepper. Cook for 5 minutes over medium heat, and then pour in the juice squeezed from half a lemon. Place the chopped potatoes in a deep dish and pour over the resulting sauce. Mix thoroughly, adding more salt and pepper if necessary. Cool the salad to room temperature before serving.
If you want to save time, use a cube or concentrate stock. However, in this case, the taste of the sauce may be slightly worse than with the classic recipe.
Meat is not included in the classic potato salad, but some housewives add sausages, ham or sausage. In this case, potato salad can become the main dinner dish, for example, for a summer table.
You will need: – 500 g of potatoes; – 100 g of pickles; – 150 g of smoked sausage; – a bunch of greens, such as dill and parsley; – 1 onion; – 1 tbsp. grain French mustard; – 3 tbsp. vegetable oil; – 1 tbsp. vinegar; – salt and pepper.
Do you find the taste of raw onions too harsh? Pour boiling water over the chopped onion before adding it to the salad. Hot water will remove excess bitterness from the vegetable and soften its taste.
Boil the potatoes in the same way as in the first recipe. Cut the peeled vegetable into small cubes. Then chop the sausage and cucumbers, mix the salad in a deep bowl. Finely chop the herbs and peeled onions, add them to the rest of the ingredients. Go ahead and prepare the sauce. Combine mustard, oil and vinegar, add salt and pepper. Pour the sauce over the dish and stir thoroughly. Refrigerate the salad for half an hour and serve. A good accompaniment for him will be German beer or light berry juice.
