A favorite dish of Russian families – pie with potatoes has recently entered the culture of Russian cuisine. A couple of centuries ago, no one would have had to bake a dough with this root vegetable inside.
It is now Russian cuisine that is varied and rich, and a couple of centuries ago there were so many types of dishes on the table of the Slavs that the fingers of one hand were enough to count. Basically, they consumed cereals, vegetables and what nature gave: mushrooms, fish, milk, rarely meat. Until the XNUMXth century, Europeans called the dishes of the Russian table barbaric, but Orthodoxy made its contribution. Due to the large number of posts, willy-nilly, it was necessary to introduce variety, excluding some ingredients, replacing others. And so there were numerous options for pies, stews, soups.
By the way, the pie is a truly Slavic dish. Neither European nor Asian cuisine knew him, while in Russia pies were eaten back in the XIV century. They ate and praised in the annals, but the true recipes for the pies have not survived to this day. According to fragmentary information, pies were baked with porridge, cabbage, potatoes, fish, eggs, and cottage cheese.
Before potatoes, turnips were put in pies, but two centuries ago, a Dutch root vegetable, which merchants began to supply to ordinary people, significantly squeezed it out and took its place between two layers of dough. Today, housewives love to cook a large pie with potatoes and minced meat. This is a hearty and tasty dish for the whole family or a large company.
To make the cake elegant, with a beautiful crust, immediately after taking it out of the oven, brush it with melted butter
To make a potato pie with minced meat, you will need: – peeled potatoes 500 g, – minced meat 300 g, – onion 1 pc., – canned mushrooms 200 g, – kefir 100 m, – margarine 100 g, – salt and pepper taste – vegetable oil.
You need to make a soft dough. Melt margarine and mix with fresh kefir. Then add flour and knead the dough. Pour in flour not immediately, gradually, constantly stirring the mass, until you get a dough that does not stick to your hands. Divide the dough into two parts.
Put one part on a wide baking sheet, previously greased with vegetable oil, make sides. Leave the second portion to cover the pie just before baking.
Cut the peeled potatoes and onions into thin slices. Salt the potatoes a little. Next, put the defrosted minced meat in a bowl and add salt and pepper to your taste. You need to knead the minced meat with spices in a separate plate.
Next, place the slices of the sliced potatoes on a layer of dough. Put onion sliced into rings on a layer of potatoes, on top – a layer of minced meat. Then another layer of potatoes (you need to sprinkle the potatoes with vegetable oil) and another layer of minced meat.
Now is the time to cook canned mushrooms. Place the mushrooms in a colander, cut into thin slices and place thinly on a layer of minced meat.
Roll out the dough from the second part and cover the cake with it, close the edges. Now you can put the pie for baking in an oven heated to a temperature of 180 degrees. The pie will take 30-40 minutes to cook.
The resulting dish is about 6 servings. Bon Appetit!
