Pork in mustard sauce: ingredients
Prepare the following products for cooking: – 1 kg of the freshest pork (you can take a little more); – 20 grams of granular mustard; – 300 g of fresh mushrooms; – olive oil; – large onion; – 1 glass of cream; – 250-300 milliliters of meat broth; – 0,5 cups of dry white wine; – salt; – ground black pepper; – seasonings to taste.
You can use cream of any fat content, but it should be borne in mind that the higher the fat content of the cream, the thicker the sauce will be. Take champignons as mushrooms, they cook quickly and give the sauce a special flavor.
How to cook pork in mustard sauce: culinary secrets
Try to choose the pork loin without veins, bacon and films. This will make the dish softer and more tender. Prepare the stock in advance that you need for the meat, but it should not be too fatty.
The first step is to do the preparation and cutting of meat. Thoroughly wash the piece of pork under running water and pat dry with a paper towel. Cut the meat with a pre-sharpened knife into medium pieces or strips. Then put the saucepan on the fire, pour in a little olive oil and lay out the pork, fry until golden brown. Remember to stir the meat periodically with a spoon. Remove the meat from heat and transfer to a heavy-bottomed saucepan.
Prepare vegetables and mushrooms. Peel the onion and chop it finely. Wash the mushrooms, remove debris and dark plaque, if any, cut. Fry the onion with mushrooms in olive oil until half cooked and transfer to the pork.
Make a creamy mustard sauce. Combine meat broth, dry wine, cream and mustard in a bowl. Add some salt and spices, stir the sauce well. Pour over the pork with vegetables and simmer over medium heat for 40-50 minutes. Divide the cooked meat into plates and serve.
Make sure that all liquid does not evaporate. A little water may be added if necessary. If you cook such pork on the grill, the taste will be simply unforgettable.
