The pork shoulder has excellent taste. This tender and least fatty part of pork does not require lengthy cooking. It can be used to make stews, ham, goulash. Home-style pork shoulder is especially tasty, baked in a piece in foil / sleeve or cooked with vegetables and mushrooms in pots.

How to cook a pork shoulder at home

To prepare pork shoulder according to this recipe, you will need:

Rinse the pork shoulder, dry it with a napkin or paper towel and place in a deep dish. Combine salt with pepper and other spices (cumin, cardamom, juniper, sage, basil). Rub the pork on all sides with the prepared mixture.

Wash, peel and cut the carrots into elongated slices. Cut the peeled garlic cloves into flat slices. Use a knife to cut deep, vertical cuts all over the meat, and lash the scapula with chunks of garlic and carrot slices. Cover the dish with a lid and let the pork marinate for a few hours at room temperature.

The meat can be left to marinate overnight. In this case, it must be placed in a cool place.

After marinating, wrap the pork shoulder tightly in foil, place on a baking sheet or in a deep baking dish and place in an oven preheated to 180 ° C to bake. Roast the pork for about an hour and a half. Then carefully unfold the meat, cut into portions and serve hot to the table.

Homemade Pork Shoulder Roast Recipe

To cook roast pork shoulder, you need to take:

  • 0,5 kilograms of pork shoulder
  • 2 carrots
  • 1,5 kilograms of potatoes
  • 200 grams of mushrooms (champignons, white mushrooms, honey agarics)
  • 2 bulbs
  • 2-3 tablespoons of sour cream
  • 1-2 tablespoons of oil
  • salt
  • ground black pepper
  • Bay leaf
  • spices to taste

The amount of food for roasts is based on four XNUMX/XNUMX liter pots.

Wash the pork shoulder, pat dry with a paper towel, cut into slices, salt, pepper and fry in a greased frying pan. Then arrange in portion pots and add 1 bay leaf each.

Wash the potatoes, peel, cut into strips and mix with carrots, grated on a coarse grater. Season the potatoes with salt to taste, season with spices and lightly fry in vegetable oil. Then arrange in pots.

But in the freed pan, fry the mushrooms and onions, add sour cream, pepper and salt. Then transfer to pots of pork and potatoes.

Pour hot boiled water into each pot and place in an oven preheated to 180 ° C to simmer until tender. This will take about an hour and a half.
