  3. Salce should be only white with a pleasant delicate taste. Preferably less pink! This means that the blood was poorly drained when the pig was slaughtered.
  4. The thickness from the skin is 2-7 cm. The optimal thickness is 2,5-3 cm. It is not worth buying too thin or thick. Try the skin “for a tooth”, it should be soft.
