Pork kidneys have a specific taste and smell, so many people ignore this by-product. But there are many recipes that you can follow to prepare delicious dishes. For example, with pork kidneys, a wonderful pickle is obtained. And they also stew these by-products, make gravy, put them in pies, and so on.
Delicious pickle with kidneys and barley
You will need: – 300 g of pork kidneys; – 200 g of potatoes; – 1 carrot; – 10 g of parsley root; – 1 onion; – 250 g of pickled cucumbers; – 100 pickle (cucumber); – 50 pearl barley; – 50 g butter; – 100 g sour cream; – parsley and dill; – bay leaf, peppercorns and salt.
To remove the specific odor from pork kidneys, first peel them from the film, then cut into 4 parts and remove the ducts. Fill the kidneys with cold water, preferably milk, and leave for 2-4 hours. Change the water several times. Then put the kidneys in a pot of water, bring to a boil and drain the broth. Cut the buds into small pieces, fill with new water and cook. Skim off the foam if it appears.
Steam the pearl barley in advance. To do this, first rinse it in several waters, and then pour boiling water over it.
Peel, wash and cut into strips of parsley root and carrots. Fry them in butter and place them in the broth 30 minutes after the kidneys start boiling. Also put in the steamed pearl barley. Cook for another 15 minutes.
Meanwhile, peel, wash and chop the potatoes. Peel the onion and chop it. Dip potatoes and onions in the pickle. And after 10 minutes add chopped pickles and pickle. Taste the soup and season with salt. Add spices, chopped herbs and turn off the heat. Hold the pickle under a closed lid for 10–20 minutes and serve the dish with sour cream.

Pork kidneys stewed in sour cream
You will need: – 1 kg of pork kidneys; – 1 head of onion; – 50 g butter; – 200 g sour cream; – garlic; – pepper and salt.
Wash the kidneys, make an incision and remove the film. Then divide the buds in half and remove any veins. Wash the meat and then soak for 2 hours. Change the water often. Then boil the kidneys, while the foam can not be skimmed, because you do not need the broth. Rinse again and then cut the buds into thin slices.
Peel and chop the onion. Put butter in a saucepan and fry the onion, add the pork kidneys. Season with salt and pepper. Put sour cream on top, stir and set to stew for 10 minutes. Chop the garlic and add to the kidneys. Keep it on fire for another minute and turn it off. Serve with rice, mashed potatoes or buckwheat. It is good to add pickles. If the kidneys are cooked correctly, it will be a delicious dish.
