Pork chops should be cooked from high grade meat. The most delicious chops come from the shoulder blade, brisket, and loin. The slightly sweet taste of pork goes well with fruits, honey, prunes and nuts. Pork chops can be served with vegetable salads, fresh herbs, mustard, cheese, and sweet and sour sauces. But the real highlight of the pork chop is the batter.
To cook pork in batter, you will need: – 500 g of pork; – 6 eggs; – 200 g of flour; – 5 tbsp. milk; – 3 tbsp. sour cream; – 3 tbsp. cream; – vegetable oil; – 2-3 cloves of garlic; – salt; – pepper.
Cut the pork into slices about the size of your palm and beat until fine, sprinkle with a mixture of pepper and salt. Prepare a liquid batter. To do this, mix eggs with milk, sour cream, cream, add flour and garlic, peeled and passed through a press, salt and beat well.
Dip the pork chops in batter, put them in a pan with heated vegetable oil and fry for the first 2 minutes over high heat, then turn the meat over and fry for another 15 minutes over moderate heat.
If the chops are fried in a mixture of vegetable oil and butter, the meat will be more tender. To add a spicy taste to the meat at the end of frying, you can add a tablespoon of dry white wine to the pan, cover and simmer for 2-3 minutes
Pork Chop in Potato Batter
To prepare chops in batter according to this original recipe, you need to take: – 500 g of pork; – 500 g of potatoes; – 100 g of onions; – 2 eggs; – 3 tbsp. flour; – 2 cloves of garlic; – 200 g sour cream; – vegetable oil; – salt; – pepper.
Wash the meat, pat dry and cut into thin slices about 1 cm thick. Then beat with a wooden mallet, salt and pepper.
Peel the onion and cut into small cubes. Wash the potatoes, peel and grate on a coarse grater and squeeze the juice well. Then mix the potatoes with onions, beat the eggs into the mass, add flour, add 2 tablespoons of sour cream and garlic passed through a press, salt and pepper and mix everything well.
Pour oil into a skillet and place on the stove. The chops should be roasted in a very well preheated skillet. Dip the pork chop into the potato batter, dipping it, make sure that it covers the meat on all sides, then transfer the pieces to the pan with butter.
When cooking pork chops, it is important not to overexpose the meat on the fire. Otherwise they will be dry.
As soon as the pork chops are browned on one side, turn them over immediately. When the meat is well done, transfer it to a greased baking sheet or in a heat-resistant dish, coat the chops with the remaining sour cream and place the meat in an oven preheated to 180 ° C. After 15 minutes, the pork chops in the original potato batter will be ready. You can serve the dish with a vegetable side dish.
