Pollock is an inexpensive, low-fat fish of the cod family. Many people ignore him, passing by the counter in the store, but in vain. Pollock can be used to prepare delicious dishes, for example, to bake it in the oven. And there are great recipes for that.

Pollock baked in foil

You will need: – 1 kg of pollock; – 2 heads of onions; – 1 tbsp. l. lemon juice; – 2 tbsp. l. homemade mayonnaise; – ground black pepper and salt to taste; – optional spices for fish.

Process pollock carcasses. Usually this fish is sold already without entrails and without heads. But you still need to scrape off the small scales and remove the black film from the abdomen. Also trim the fins and tail. Wash the fish, pat dry with a kitchen towel. Divide the pollock into portions, if you want, leave it whole. Rub with black pepper and salt, optionally with fish spices. Drizzle with lemon juice. To marinate the fish better, wrap it with cling film and set it aside for half an hour or an hour.

During this time, you need to make homemade mayonnaise. In a bowl, add one raw yolk, some cooked mustard, half a teaspoon of apple cider vinegar, and salt and pepper to taste. Beat with a mixer in one direction, then pour in sunflower or olive oil in a thin stream. At the same time, do not stop whipping the mixture in the same direction.

Remove the cling film from the pollock, place the fish on the foil, spread with mayonnaise. Chop the onion and place on top. Wrap, fasten the edges of the foil. Bake the fish in the oven for 30 minutes. Pollock turns out to be very juicy and tasty.

Pollock with mushrooms baked in sour cream

You will need: – 500 g of pollock; – 1 head of onion; – 250 g of fresh mushrooms, better than champignons; – vegetable oil for frying; – 2-3 st. l. flour; – 1 processed cheese; – a glass of low-fat sour cream; – spices to taste; – salt.

Peel the fish, cut into pieces, sprinkle with spices and salt, stir and leave covered for 15-20 minutes. You can also drizzle with lemon juice to enhance the taste. During this time, peel and chop the onion. Wash and chop the mushrooms. It is better to take champignons, but white mushrooms (boletus) are also quite suitable. Fry the onions and mushrooms in vegetable oil. Salt. Dip the pollock pieces in flour and place on a baking sheet. Cut the processed cheese into thin slices and place on top of the fish. Place fried mushrooms and onions on top, and then pour with sour cream. Bake pollock in the oven at 180 degrees for 30 minutes. Sprinkle with parsley and serve. It turns out very tasty.
