This is the result of, on the one hand, the fashion for healthy eating and, on the other hand, the desire to diversify the kitchen.
The health benefits of consuming legumes are generating increasing interest from scientists, and their consumption and production are expanding around the world. Nothing unusual. The physiological effects of individual legumes vary, but in each case, we can count on the health benefits of their consumption: protection against many diseases or disorders, such as coronary heart disease, diabetes, high blood pressure and inflammation.
Legumes are an excellent source of protein, dietary fiber, as well as iron, manganese, cobalt, phosphorus, zinc, calcium and magnesium.
Chickpea cookies
Ingredients:
1 and 1/2 cups of cooked chickpeas
1/2 cup of peanut butter
1/4 cup of amaranth flour
1/4 cup of honey
1 level teaspoon of sodium
1 handful of cranberries
Manufacturing method:
1. Blend all ingredients, add cranberries at the end.
2. Put a teaspoon of mass on baking paper.
3. Bake for 10-15 minutes at 175 degrees C.
Bean cake
Ingredients:
300 g of soaked, cooked red beans
3 eggs
7 tablespoons of stevia
5 tablespoons of cocoa
1 teaspoon baking soda
1 handful of chopped dried dates
Manufacturing method:
1. Blend the beans with the yolks.
2. Beat the egg whites with the addition of stevia.
3. Gently combine all ingredients.
4. Bake 45 minutes. in 180 degrees C.
Lentil muffins
Ingredients:
150 g of red lentils
2 eggs
5 tablespoons of yogurt
3 spoons of honey
4 tablespoons of oil
70 g of ground oatmeal
1/2 cup chopped almonds
1 teaspoon of baking powder
Manufacturing method:
1. Boil the lentils, cool them down and mix with the eggs, and then with the rest of the ingredients.
2. Put the mass into molds and bake at 180 degrees C for 25 minutes.
Legumes are an important component of the human diet in various parts of the world. However, we still eat too little of them. The greatest number of legumes is eaten in South America and Africa (FAOSTAT data from 2009). It is about 10-11 kg per person per year, while in EU countries less than 3 kg per person per year. Therefore, it is worth smuggling these valuable products in every possible meal, even in the form of a delicious dessert.
