Plum jam

The practice of preparing sweet blanks for the winter came to our region since the time of ancient Russia. Especially popular preservation in this category then and now is plum jam. This is explained by the widespread cultivation of such trees, many different varieties and a whole wagon of nutrients in the composition.

Today, there are many options for blanks based on yellow, white, royal black plum, worthy of attention. But for their proper preparation with the subsequent preservation of most of the useful components you need to learn some tricks.

Trace element storage

Plum jam, which has undergone minimal heat treatment, or was prepared without it at all, is an ideal solution for those who want to preserve a nutrient-rich composition. The pulp of the fruit boasts a huge amount of minerals, many times greater than not only apples, but also pears.

Thanks for this should be zinc, iodine, copper, potassium, calcium, iron, sodium. There are pectins that act as assistants in removing carcinogens, radionuclides, and other wastes from the tissues of organs, which slowly poison the body.

The secret of the storehouse of benefits is the maximum concentration of vitamin B2 in the pulp of the fruit. Especially a lot of it in black varieties.

At the expense of such an assistant, a person will quickly improve the inhibiting protein metabolism, which will have a beneficial effect on the functioning of the nervous system.

For those who are at risk of diseases of the cardiovascular system, a couple of spoons of goodies per day will turn into a reliable shield against the deterioration of blood vessels. Vitamin P will increase the strength of the vascular walls, which will be an excellent prevention.

The abundance of coumarins complements the picture of caring for the cardiovascular system. They are the key to blocking the formation of blood clots. If you add to this the presence of vitamins of group B, PP, E, C and beta-carotene, you will get an almost perfect addition to tea.

Thick jam is filled with organic acids, monosaccharides, which give the energy necessary for full mental work.

So tasty nourishment for brain activity will help you better tolerate stress, while maintaining the maximum concentration. And dietary fiber contributes to good digestion.

Patients complaining of consistently high blood pressure can find natural salvation in the jam presented. The components of the fetus trigger the process of removing cholesterol, which likes to be deposited on the walls of blood vessels, which leads to the destabilization of their work.

Soft varieties with a bone have a positive effect on reducing the risk of constipation, and are also an integral part of the treatment of intestinal atony in traditional medicine. Against this background, a light diuretic and choleretic effect well complement the situation.

Many medicinal diets allow the use of this sweetness so that in addition to moral satisfaction the body can successfully get rid of excess salt and fluid. The last point has a beneficial effect on the reduction of swelling, and also acts as an auxiliary tool for complex cleansing of the body.

Healing diet, providing for many favorite jam, often assigned to those who suffer:

  • impaired gastric secretion;
  • kidney disease;
  • liver disease;
  • deviations of the functioning of the gallbladder.

Liquid jam with an abundance of juice reduces gastric acidity, which is useful for those who regularly suffer from heartburn. It is put on the table in winter for those who have gastritis, ulcers that are not in the acute stage of the course, but in a chronic form.

Adherents of traditional medicine at all argue that the plum technique with regular use can cure small gastric ulcers, not to mention the healing of some other types of wounds.

Even two hundred years ago, ointments with tinctures on miracle fruits became the main remedy for the treatment of conjunctivitis, other diseases of the organs of sight and urolithiasis. Until now, ophthalmologists recommend putting pressure on them when a deviation occurs in terms of vision.

Pre-harvested sweet canned seedless seed will be useful for the overall maintenance of immunity during the cold period. With its help you can not only successfully resist a cold, but also experience stress without undue stress on nerve cells.

Negative aspects

Many believe that the main disadvantage of dessert is its high calorie content. But here it all depends on the amount of sweetener invested. Cold cooking with honey instead of granulated sugar promises only about 300-350 kcal per hundred grams of the finished dish. Raw fruits have the following energy value:

NameWeight per 100g
Proteins0,4 g
Fats0,3 g
CarbohydratesAbout 75 g

Usually the cleansing effect of the product is called its trump card. But there is a reverse side of the coin. It’s not for nothing that severely ill patients and babies up to three years old are completely contraindicated.

Minors on reaching three years are allowed to give only yellow varieties, previously passed the stage of heat treatment. A five-year plan can eat all kinds of species, but also only processed in a slow cooker in the mode of cooking, extinguishing.

Diabetics will have to give up the goodies; they will be shocked by the amount of carbohydrates per hundred grams of product. It is hardly possible to find hard diets that require the use of these fruits.

Some sources claim that the fruits, affecting the acidity of gastric secretions, are undesirable in gastritis and ulcers, which goes against the data of traditional medicine. The reason lies in the features of the ulcerative lesions themselves, the severity of the disease. To find out whether it is possible to use jam, it is better to check with your doctor beforehand. Focusing on the current state of health and the results of the clinical examination, he will give a specific answer.

Particular attention should be paid not fully ripe fruit, as well as their bones. They contain dangerous hydrocyanic acid, which can accumulate in organs and tissues.

Recipe for the lazy

The easiest recipe to practice was at the same time one of the most useful. This is explained by the minimum expenditure of time allotted for thermal processing. Classic five-minute includes only three ingredients:

  • plums – 2 kg;
  • sugar – 1 kg;
  • vanilla sugar – 1 sachet.

To obtain a homogeneous consistency, it is better to take slightly underripe specimens, which will save from cooking.

First, the gifts of nature are washed under running water to rid them of garden waste. Then you need to tear off all the stalks. To remove the hard core was easier, you need to cut the soft part in half, pulling out a knife with a knife. The resulting result is covered with sugar, leaving to insist all night.

Time is needed for solidification of the billet, which runs the juice. In the morning you need to send the filled container to the stove to bring the mixture to a boil over high heat.

As soon as large bubbles appear, the flame diminishes, allowing it to boil in this mode for about five minutes. So that the sweetness is not burnt, you will have to mix it thoroughly all the time. At the expiration of the term, the mass is sent to cool. After complete cooling, the procedure is repeated.

But here it is important to remember that you only need to bring to a boil and immediately turn off, and not send to a low fire. Boiling dessert is laid out on pre-sterilized banks. Keep the pride of the winter menu to either in the basement or in the refrigerator.

Tasty jelly

Having played enough with the traditional recipe, the hostesses begin to experiment with more unusual variations. Just such an option is a recipe with gelatin. The finished culinary composition really resembles juicy slices frozen in zero gravity. To cook everything according to the original, you have to adapt to the correct ratio of ingredients:

  • 1 kg plums;
  • 30 g of gelatin;
  • 2 kg of granulated sugar.

To obtain the optimum consistency, you need to take only the densest specimens, otherwise the idea will fail. After washing, the billet is cut in half to remove the core and cut into equal segments. Some cooks leave only halves, but they look in a frozen form less effectively.

To create the foundation, an extremely deep enameled vessel is required, where all the components are stored. Winter conservation experts urge you not to skimp, adding a tablespoon of sweetener to each half.

The mass is sent to infuse overnight so that a sufficient amount of juice is released. Upon completion of the temporary exposure, the container is sent to the stove, where a medium intensity flame is set. After the mixture boils, it is immediately turned off and, without waiting for cooling, immediately rolled. It is important to prepare sterilized jars with lids on time.

The final step is the rearrangement of the container upside down, followed by wrapping in a blanket. In this position, the preservation will last for about a day, after which you can send food for storage in the basement.

There is another important secret here. Before you eat cooked, it is better to send it for an hour or two in the fridge (freezer) so that it is healed.

Yellow recipe

Most versions of making jam at home imply the need to take large juicy varieties of black or purple plum. But enterprising hostesses have long adopted a yellow variation that is less in demand for winter twists. It is usually cheaper, but because of this, it is no less tasty.

Cherry plum, which usually bears fruit for a short period, is taken as the basis. To add brightness in a jar, it is recommended to attract sweet oranges. One and a half kilos of the main product and the same amount of sweetener, half a kilo of citrus fruits is enough.

First you have to sort out the crop to get rid of rotten copies, leaving only completely intact. This will extend the shelf life. Selected wealth should be thoroughly washed and dried, and then rid of the hard part.

We’ll have to tinker with oranges, which are first washed, and then scalded with boiling water. Citrus fruits do not peel, but only cut into equal parts, throwing out the bones. At the end of the preparation they are passed through a meat grinder, or through a blender.

The following step by step instructions are very easy:

  1. Citrus puree is mixed with harvested cherry plum, putting it all together in an enamel container.
  2. Mass is filled with sugar, leaving in this position for thirty minutes. This will allow the juice to dissolve the sweet crystals, so that later it does not burn.
  3. Half an hour later, the pot is rearranged to medium heat, waiting for boiling.
  4. After the appearance of bubbles, the fire mode is rearranged to the minimum. So the dish is prepared for a couple of minutes. During this you need to constantly stir the mixture, removing the foam.
  5. Hot billet laid out on sterile jars.

The procedure ends with the traditional wrapping in a blanket.

Culinary life hacking

If jam requires whole fruit with bones, then for abundant juice you need to pierce them with toothpicks. Such a precautionary measure will keep them relatively intact, preventing them from bursting and at the same time allow them to be fed up with the syrup as evenly as possible.

Recipes involving the use of small varieties cooked entirely, it is better to start with blanching. Fruits immersed in hot water with a temperature of no more than 80 degrees. But large specimens should not be doused with boiling water.

If after the purchase it turned out that the crop has too thin skin, it is better to split the cooking into several approaches with a preliminary exposure in the syrup. This will ensure at least relative integrity. But the seemingly fragile plum does not need such precautions.

If in the process of cooking it turned out that the mixture is not at all fragrant, you can help her acquire a bright smell with the help of vanilla or fruit essence. No need to worry if the final mass was too liquid. Simply collect all the syrup, pouring it separately from the plums, and send it to boil. Upon reaching the desired consistency, the main components are returned to the total capacity to bring to a boil.

Presented versions of seaming can be supplemented at your own discretion. Someone likes the chocolate aftertaste, which is achieved through the addition of cocoa powder. And someone welcomes oriental notes that are provided with cinnamon, cloves, lemons. The limiter can serve only your own imagination.
