Neither thick nor liquid, moderately spicy, with a light taste of herbs – an ideal pizza sauce must meet a whole series of requirements, but in this case the pizza will turn out to be such that Italians will not be ashamed to serve it. In a word, real.
Many people think that they already know how to make pizza sauce. The recipe for this is not particularly needed. Just think, they say … I smeared it with ketchup and what else is there. And they are cruelly mistaken. Sauce making is a real art, although not that difficult. You just need to take the following products: – 1 kg of fresh tomatoes, – 1 red or white onion, – 1 handful of fresh basil leaves, – 1 handful of oregano leaves, – 4-5 cloves of garlic, – 1-2 bay leaves, – 2 tbsp … l. olive oil.
You can use a blender to make the sauce, but this is not a prerequisite
Cut the tomatoes into small cubes. Really small, the side of the cube should not be larger than half a centimeter. Chop the garlic, pinch the herbs from the twigs. Peel the onion and cut it in half.
Herbs for making the sauce are best taken fresh. You can replace them with dry ones in the amount of 1 tbsp. But with fresh spices, the sauce will turn out to be much tastier and more aromatic.
Heat olive oil in a skillet or thick-walled saucepan over high heat, add garlic to it, fry it a little while stirring quickly so that the smell just starts to stand out. Garlic should never begin to brown. Send tomatoes, 2 onion halves, Herbs and bay leaf to the garlic, reduce heat to low and leave the sauce to simmer for the next 30-40 minutes. At the same time, it should at least halve in volume. Remove the onion halves and bay leaf from the tomato thick, add salt and pepper to taste and you can say that the pizza sauce is ready.
You can grind the remaining whole tomato slices with a blender, this will make the sauce smoother, but you can leave everything as it is. Some people even like this heterogeneous structure better.
You can add kefir, garlic, any other ingredients to the sauce given in the recipe, and you will get a new original sauce, but it is better to stay on the classic version and make, for example, the most ordinary loaf a la pizza. It does not need anything other than the usual yeast dough, rolled into a thin cake. Just grease it with the prepared sauce, sprinkle with a small amount of chopped garlic, send it to the oven for 7-8 minutes. 30 seconds before cooking, put a few basil leaves and some sliced parmesan on the tortilla and send it back to the oven. Such a simple appetizer looks very Italian, and the taste will not differ much from those pizzas that the inhabitants of the Apennine Peninsula are so proud of.
