Pirosmani wine: a short history and an overview of the drink

The fragrant ruby ​​drink has been produced in the sunny Alazani Valley, located in eastern Georgia, since 1981. The peculiarity of wine is in its natural sweetness.

Pirosmani is classified as natural semi-dry, while it is made without the inclusion of additional sugars. After fermentation, some of the fructose remains in the grape juice, which gives the drink an unusual taste.

The name of the wine was in honor of the famous Georgian primitive artist Niko Pirosmanishvili, who, having no education in the field of art, devoted himself to painting and achieved recognition. True, it came to him only after death. Niko’s sketches glorify the beauty of native nature and the originality of Georgian traditions. There was a place in them and the art of winemaking. Elements of famous reproductions can be seen on the labels of Pirosmani.

The uniqueness of the Pirosmani manufacturing process is associated with the commitment to ancient Georgian technologies. The Saperavi variety is mainly used as grape raw material, in rare cases supplementing it with the fruits of Rkatsiteli. Grapes are harvested during the period of greatest sugar content, which largely determines the original taste of the drink. Further wine is produced in accordance with the Imeretian tradition:

  1. The fruits are peeled and crushed.

  2. After preliminary preparation, the raw materials, together with the bones and skins, are transferred to special containers buried in the ground. Such vessels are called kvevri and contain up to 5 thousand liters of future wine.

  3. In ceramic jugs, the drink is aged for several months. Underground storage allows you to achieve a constant temperature (about 14 ° C) and preserve the natural taste.

  4. The fermentation process is stopped with the help of refrigeration units, after which the wine is settled, pasteurized and bottled.

In addition to classic glass bottles, you can find Pirosmani in ceramic containers. It is also a tribute to ancient customs and an attempt to emphasize the local flavor.

It is believed that true Pirosmani, in compliance with all technologies, is produced only in wineries near the village of Kardanakhi: the most famous brands are Georgian Royal Wines and Tiflis Wine Cellar. Other worthy producers include Corporaton Georgian Wine, Badagoni Wine Company and Graneli.

    This wine has an intense ruby ​​red color with garnet-violet hues.

    You can clearly distinguish berry notes: dark cherries, currants, prunes.

    Connoisseurs describe the fragrance as “tart”, “spicy”, “fresh”, “soft”.

The fortress is 10–12%. Serve Pirosmani is recommended chilled (up to 16-18 ° C). Ideal additions: meat (barbecue, game, fried), thick sauces, spicy snacks, cheeses. It can be combined with desserts, pastries and fruits.

Also, in addition to red, they also produce white Pirosmani. However, it does not apply to vintage and is considered less interesting. The drink is more appropriate as a summer aperitif. It is characterized by floral-fruity shades with a honey aftertaste. Serve white Pirosmani with fish and salads, white meat.
