What cones can be used for cooking
When you decide to make pine jam, you will need to harvest the fruit for it first. In different climatic conditions, cones ripen at different times. Closer to the south, fruits can be harvested from late May to early June. In cooler areas – at the end of June. They eat young cones, which are just beginning to open. Their length ranges from one to four centimeters, they are green, since they have not yet had time to harden. Try poking through a pinecone with a knife or with a fingernail – it should give way easily.
For this jam, you will need to collect about a kilogram of cones
To make pine jam, you will need: – young pine cones; – sugar; – a bowl or saucepan for cooking; – glass jars. – Take pine cones, rinse them thoroughly in cold water and put them in a cooking container. Pour water over the fruit so that it is one to two centimeters higher than the fruit. Turn on the heat, bring the water to a boil, cover the bowl or saucepan with a lid and keep on the fire for half an hour. After that, remove the jam and put it in a dark place for twelve hours.

After twelve hours, remove the present jam. Separate the liquid from the buds and mix it with sugar in a one-to-one ratio. Cook the resulting syrup over low heat until the jam stops spreading and takes on a rich raspberry color. Delicious pine cone jam can be made without even cooking. Take the pine fruit, rinse it, sort it out and cut it into small pieces. Dip each piece in sugar and lay in layers in a glass jar, additionally sprinkle each layer with sugar. Cover the jars with gauze or a natural cloth and set them in the sun. Shake the jam occasionally until the sugar is completely dissolved. After that, the jars with the ready-made delicacy should be tightly closed with lids and stored in a dark place.
Pine cone jam can be used as a medicine that is more effective than many drugs you can buy at the store. It helps with diseases of the upper respiratory tract, flu, asthma, gum disease. However, like any medicine, this jam has its own contraindications. Pine cones should not be consumed by people with kidney disease or acute hepatitis. In large doses, pine jam can cause indigestion and headaches even in healthy people.
