The meat of this fish is famous not only for its pleasant and delicate taste, but also for the minimum amount of fat. Pike perch fillet baked with onions and tomatoes

Ingredients: – 400 g pike perch fillet; – 6 pcs. cherry tomatoes; – 2 tbsp. tablespoons of olive oil; – 1 head of onion; – 2 tbsp. tablespoons of lemon juice; – 1 tbsp. a spoonful of grated parmesan; – salt and black pepper to taste.

Wash the pike perch fillet, dry on a napkin and beat slightly. Rub with salt and black pepper, drizzle with lemon juice and olive oil. Place in a plate, cover and refrigerate for 15–20 minutes.

Cut the tomatoes and onions into rings. Put each piece of fillet in foil, garnish with onions and tomatoes. Then wrap the foil tightly to prevent juice from leaking out. Place in an oven preheated to 200 ° C and bake for 20 minutes.

Carefully remove the finished dish from the foil and place on plates. Sprinkle with finely grated Parmesan. As a side dish, you can serve tender mashed potatoes or boiled rice mixed with canned corn.

Pike perch shashlik with bacon and bell pepper

Ingredients: – 300 g pike perch fillet; – 1 sweet pepper; – 150 g bacon; – salt and black pepper.

Cut the pike perch fillet into large cubes, which are well seasoned with salt and pepper. Cut the bacon into thin slices and wrap the fish slices. Cut the bell peppers into small cubes.

For a vibrant dish, use orange or yellow peppers.

Place the fish in bacon on skewers, alternating with chunks of bell pepper. Bake in a hot oven or grill for 10 minutes. Put the prepared shish kebab on a plate covered with lettuce leaves.

The recipe for this dish involves frying pike perch fillets in a large amount of vegetable oil. It can be prepared in the following way, not only in a frying pan, but also in a deep fryer. To do this, you need the following products:

– 800 g pike perch fillet; – ½ lemon; – 1 cup vegetable oil; – 2 egg whites; – 1 glass of flour; – 1 bunch of parsley; – 1 glass of milk; – ground black pepper and salt.

Wash and dry the fish fillets. Cut into pieces 6 cm long and 1 cm thick. Season with salt and pepper to taste.

In a deep cup, combine ½ cup vegetable oil, the juice of half a lemon, and coarsely chopped parsley. Dip pike perch fillets in the marinade and leave for half an hour.

Prepare the batter. In a separate bowl, combine a glass of cold milk and 2 tbsp. tablespoons of vegetable oil. Gradually add flour to them, salt and knead the batter. Add the whipped egg whites at the end.

Heat vegetable oil in a frying pan and fry pieces of pike perch fillet in it, having previously dipped them in batter. The fish should be golden brown. Be sure to dry the fried fillets on a paper napkin before serving to remove excess fat.
