Pike perch caviar is a source of easily digestible protein, vitamins of group B, C, A, E, amino acids, calcium, magnesium, zinc, copper, iron, nickel, manganese. Various dishes are prepared from this product, but home-salted caviar is especially tasty.
To pickle caviar, you will need:
– 800 g of caviar; – 300 g of salt for the solution; – 3 liters of water for the solution; – 1 teaspoon of salt; – 4 tablespoons of oil.
Place the pike perch roe in a deep bowl and chop it with a sharp knife. Now pour a boiling solution of sodium chloride (from 1 liter of water and 100 g of salt) and stir it well with a fork so that the films are wrapped around it. Then drain the liquid, prepare a new solution of water and salt, taken in the same amount, and refill the caviar with zander. Repeat the fork manipulation, drain the brine again and select the films. Pour the cleaned caviar for the last time with boiling water with salt prepared from the last 100 g of salt and a liter of water. Mix thoroughly again and fold on a fine sieve for 15 minutes.
Pour 2 tablespoons of vegetable oil into a clean liter jar, fill it with caviar to 70%, add a heaped teaspoon of salt and stir. Now fill the jar with caviar and pour 2 more tablespoons of vegetable oil on top. Close the jar with a lid and put it in the refrigerator, after 5 hours it can be eaten. The caviar turns out to be lightly salted, crumbly, of a delicate yellow color.
You can make wonderful sandwiches from salted pike perch caviar. To do this, you need to spread butter on the slices of the loaf, put the caviar on top and decorate it with herbs
Delicious pancakes are made from pike perch caviar. To prepare them, you will need: – 150 g of caviar; – 1 carrot; – 1 onion; – salt to taste; – 1 tablespoon of vegetable oil; – 1 tablespoon of flour; – 1 tablespoon of starch; – 1 chicken egg.
Rinse the pike perch caviar, free it from the film and chop it with a blender. Pass the carrots through a fine grater, cut the onion into several pieces and also pass them through a blender. Combine caviar, vegetables, egg and oil in a bowl. Add flour and starch to the finished mixture, mix thoroughly again.
Fry thin pancakes in a preheated non-stick skillet until golden brown. Serve with vegetable salad and sour cream sauce.
From zander caviar, you can make a salad that goes well with black bread and butter sandwiches. To prepare the dish, you will need: – 400 g of caviar; – 1 small onion; – 2 tablespoons of vegetable oil; – 1 teaspoon of vinegar (9%); – salt to taste; – pepper to taste: – parsley; – 1 boiled carrot.
Remove the film from the caviar and pour boiling water over it, leave for 10 minutes. Then place the caviar on a fine sieve to drain the water. Next, you need to salt and pepper it, season with oil, finely chopped onions and vinegar, mix thoroughly and leave for an hour. Sprinkle the finished salad with chopped parsley and garnish with slices of boiled carrots.
