Pierre Ducane: “Food is just one of the doors to happiness”

The famous French nutritionist visited the non/fiction book fair in Moscow and shared three rules of harmony and health – they can help not only lose weight, but also find peace of mind. They are very easy to remember and explain to children.

Rule No. 1

Be aware of how sugar behaves in the body

Each of us circulates approximately 5 liters of blood. In each liter of blood, 1 g of glucose (sugar) is dissolved. That is, we contain 5 g of glucose, this is 1 teaspoon. Now let’s imagine – the evening after a hard day’s work, you are tired, hungry, in addition to quarreling with someone, you are overcome by gloomy thoughts. You go to the supermarket on your way home, you see a pack of your favorite cookies on the shelf and you buy it. And now you have safely eaten the whole pack – to improve your mood and console yourself.

Now let’s look at the composition on the package. If it is a standard cookie, it will have about 100g of sugar. All of them are now in your blood, that is, about 21 g of sugar for every liter of blood. Any doctor will tell you that this amount of sugar in the blood is incompatible with life – in 20 minutes you will go into a diabetic coma and die. But somehow we don’t die. Why? We are saved by a small organ – the pancreas. It releases the hormone insulin, which attacks the sugar, forcing it out of the blood.

Where should he go? There are three doors in front of him, and he alternately “knocks” on each of them. The liver opens the first: “Sorry, but I’m already full of sugar, because yesterday you were already here – I’ll take a third, I can’t take it anymore.” The next door is muscles. “The owner hasn’t really used us for a walk or the gym for the last 24 hours and has been eating sugar again, so sorry, just a little bit.” And only the third door opens wide open, and on the threshold the hospitable Aunt Zhirra opens her arms to the sugar molecules: “Hurry here, my little ones, there is a place for everyone.” So insulin, on the one hand, saves our lives, and on the other hand, it makes us get fat.

Rule No. 2

Avoid industrial food

In the world today, 2 billion 100 million people are overweight. This is about 1/3 of the world’s population, and obesity has spread at such a rate only in the last 40-50 years, before this was not the case. What happened? Over the same 40-50 years, we have seen a sharp rise in the industrial food industry, which is sold in supermarkets. It seems to us that we buy normal food there, but this is not so.

Let’s follow a simple chain. Let’s imagine that you went to a cornfield and picked a few ears of ripe corn there. Came home, cooked and ate. The time it takes for nutrients to reach the bloodstream is very important: the shorter it is, the more insulin is produced and the more excess fat is formed in our body. The time it takes to digest food is measured by the glycemic index. From 0 to 100. For clarity, let’s imagine that 0 is the zero speed of the car (the car is stationary), and one hundred is the maximum speed, 100 km/h. So, you ate a corncob. The speed at which it enters your bloodstream is 30 km/h (glycemic index 30). Now let’s take corn kernels from the same corn field, preserve them and sell them in canned food at the supermarket. After such industrial processing, the speed is already higher, 50 km / h. Now let’s turn the corn kernels into flour – it is added to almost all pastries. The speed has increased even more, 70 km / h. Finally, the food industry makes dough from this flour and bakes it in the form of corn flakes that they offer to children – they already have a digestion speed of 92 km / h, that is, almost the maximum glycemic index. So, the “cheat” in the production process has gone from 30 to 92. Thus, every time you go through these stages for an industrial food manufacturer, you get fatter more. And the manufacturer gets richer – because each next stage allows him to increase the price several times.

Our life is about 90 thousand meals. We can learn to choose them wisely and train our children to do the same. We do not have to be slaves, puppets in the hands of food tycoons.

Rule No. 3

Open all doors to happiness

For many years I led a medical practice – and the more I talked with patients, the more I understood that the root of the problems of many of them was not at all overweight. I came to the conclusion that there are ten doors to happiness, peace of mind. And food is just one of them. If most of them are closed, we take comfort in food. The task is to analyze which doors you have closed and try to open them. Here are the doors.

1. Food gives a desire to live and gives pleasure, as with the incoming food, the amount of the joy hormone serotonin in the body increases.

2. Relationships – everything that concerns the relationship between a man and a woman, parents and children, families. Remember your state when you are in love or a desired child was born in your family – you feel in seventh heaven with happiness.

3. Position in society – a job, a profession in which you are competent, a favorite thing give a sense of self-respect, joy, happiness.

4. Your home is a place where you feel comfortable, safe, you have the opportunity to relax and recharge your batteries.

5. Movement – everything that you do with the body (walking, sports, dancing, swimming) also contributes to the production of the hormone of joy serotonin.

6. Nature and communication with animals, observation of them. We are also children of nature, and contact with the forest, the sea relieves stress and gives us the desire to live.

7. The game. Singing, watching our favorite movies and series, board games, dancing, storytelling – all situations in which we try on new masks and play someone else’s life give us pleasure and a sense of happiness.

8. Group membership. This may be a cutting and sewing circle, which meets once a week, or an association of lovers of literature, politics, and so on. It is important that the awareness of belonging to these people fills you with self-respect and joy.

9. Spirituality is everything that is connected with higher powers, the divine.

10 Beauty – we cannot live without it, and it also gives us serotonin, gives us the strength to live.

Check which doors you have open and which are closed, and try to open them all. You can start with the simplest – a twenty-minute walk once a day. It will help increase the level of serotonin in the blood and give you the strength to get out of bed every morning with joy and anticipation of a new day.
