Many old sayings have long lost their relevance, but the one that says that the hut is not red with corners, but red with pies, is still true, and many will agree with it. The dough for pies is made in water, milk or kefir, with and without yeast, unleavened and rich. If you are a novice housewife, use simple and versatile recipes for pie dough, which will work with any filling.

If you decide to quickly make a pie, you will need: – 1 egg; – ½ tsp baking soda; – 100 g butter or margarine; – 1 tsp granulated sugar; – a pinch of salt; – 0,5 l of kefir; – 2 cups of flour.

Put kefir out of the refrigerator in advance, let it lie for half an hour at room temperature. Put butter in a large bowl, place it on the stove at the lowest temperature, melt the butter. Add salt, sugar. Beat the egg lightly, pour it into the butter, stir. Put soda in a tablespoon and drip vinegar on it – this is how the soda is quenched. Then add soda to a bowl, add kefir, mix everything.

Sift the flour. Add it in portions to a bowl, stirring constantly to avoid lumps. The dough should have the consistency of very thick sour cream. Cover the bowl with a clean kitchen towel and let the dough stand for 10-15 minutes. Then pour half into the bottom of a baking dish, place a layer of filling on top of it, and top with the remaining dough. Smooth out the surface of the pie with a tablespoon so that the dough completely covers the filling. You need to bake such a cake in an oven preheated to 180 ° C for about 45 minutes.

You can check if the dough is baked by piercing it through with a toothpick or a long wooden stick. When you take it out, it should be dry.

If you find yeast dough is difficult to make, try this recipe. There is no need to wait on it for the dough to rise, and the pies and pies end up being soft and tasty. Any filling can be used for it – both sweet and savory. To make such a universal dough, you will need: – 200 g of butter or margarine; – 1 pack of dry yeast; – ¾ glass of warm milk; – 2 tsp. granulated sugar; – 3 ½ cups of wheat flour; – 1 egg; – a pinch of salt.

If you want to make a sweet filling for this dough, the amount of granulated sugar in the recipe can be increased to half a glass.

Melt the butter, add warm milk and dry yeast to it, salt. In a separate bowl, whisk the egg with granulated sugar and add it to the milk mixture, stir. Sift the flour and also add it to this mixture, but not immediately, but gradually, in small portions, in a glass. Knead the dough well after adding each portion. The finished dough should be smooth and firm. Put it in a bowl, sprinkle the bottom and sides with flour. Place the lid on the bowl and refrigerate for 3 hours.

To make pies, the dough must be divided into pieces the size of a child’s fist. Mugs from them can be rolled with a rolling pin on a flat surface sprinkled with flour, or formed by hand. Before being sent to the oven, the pie or pies should stand for half an hour for the dough to come up. Brush them with whipped yolk and bake at 180-200 ° C for 35-45 minutes.
